SUMMARY OF POSITION
Manages back-of-house operations and enforces company policies, procedures, programs, and performance standards.POSITION ACTIVITIES AND TASKS
Ensures that all menu items are prepared, portioned, and presented properly in a clean, safe, and sanitary manner, in accordance with all established procedures. Ensures that inventory levels for both food and non-food items are properly maintained and that par levels are adjusted during both busy and slow periods. Ordering of products Maintain standard labor and food costs. Scheduling staff Maintain and keep a clean kitchen including all areas affiliated Hiring and interviews of new staff Anticipates maintenance equipment repairs and adherence to safety and Sanitation requirements. Maintain levels of communication with management team Access problems and implement solutions Attends manager meetings makes presentations as requested. Submitting menu and specials ideas to Wildwood Kitchen management Ensures the thorough training and development of kitchen staff. Hours per week 40-45 PHYSICALREQUIREMENTS/ENVIRONMENT/WORKING CONDITIONS
Extensive standing, Exposure to heat, steam, smoke, cold Reaching heights of approximately 6 feet and depths of 2 1/2 - 3 ft. Must be able to work irregular hours under heavy pressure/stress during busy times Communicating with employees and other managers Lifting up to 50 pounds for a distance up to 30 feetEDUCATION LEVEL REQUIRED
High school diploma; some college or degree preferred.EXPERIENCE REQUIRED
One to two years of previous experience cooking, preferably in management Scheduled Pay Raises matching 3% retirement account Salary Position Plus bonus pool online tips % of half total split by total full-time staff The manager's bonus program is split between managers and paid out at the end when labor, food, liquor, wine, and beer costs are met.
