Dining Facility (DFAC) Manager -
Job DescriptionPosition Title:
Dining Facility Manager (DFAC Manager)
Position Summary:
The Dining Facility Manager is responsible for the overall operation, management, and performance of a military dining facility in accordance with contract requirements, Performance Work Statement (PWS), and applicable regulations including the Tri-Service Food Code. This position ensures the delivery of safe, high-quality food service to military personnel while maintaining strict compliance with sanitation, safety, and operational standards. Key Responsibilities1. Contract & PWS Compliance Ensure full compliance with all PWS requirements and contract standards Maintain readiness for inspections (Government, QA, Public Health, and Command) Execute and enforce the Quality Control Plan (QCP) Monitor performance standards and implement corrective actions as required 2. Operations Management Oversee daily DFAC operations including breakfast, lunch, dinner, and specialty meals Ensure proper food production, serving line execution, and meal accountability Maintain efficient workflow in kitchen, serving lines, and dining areas Manage headcount flow and feeding schedules during surge operations 3. Food Safety & Sanitation Enforce compliance with the Tri-Service Food Code and HACCP principles Ensure proper food handling, storage, temperature control, and labeling Conduct daily sanitation inspections and document findings Address deficiencies immediately with corrective training 4. Personnel Management Supervise all DFAC personnel including cooks, food service attendants (FSA), and leads Develop staff schedules to meet operational and contract requirements Train employees on food safety, personal hygiene, and job performance standards Enforce discipline, accountability, and professional conduct 5. Quality Assurance & Performance Monitoring Conduct internal inspections using AQL and PRS standards Maintain documentation for inspections, training, and corrective actions Ensure consistent food quality, portion control, and presentation standards Interface with Government QA personnel and leadership 6. Inventory & Supply Management Oversee subsistence ordering, receiving, storage, and inventory control Ensure proper use and accountability of government-furnished property (GFP) Minimize waste and control food cost through proper forecasting 7. Customer Service & Military Support Ensure high levels of customer satisfaction for all service members Address customer concerns professionally and promptly Support mission requirements including field feeding, surge operations, and special events 8. Reporting & Administration Maintain required reports (production logs, temperature logs, headcounts, etc.) Submit operational reports to Project Manager and Government as required Ensure accurate record keeping in accordance with contract requirements
Qualifications Required:
Minimum 3-5 years of experience in food service management (military preferred) Strong knowledge of DFAC operations and government contracts Certification in food safety (e.g., ServSafe Manager or equivalent) Knowledge of HACCP and sanitation standards Ability to lead large teams in a fast-paced environment
Preferred:
Prior experience managing a military dining facility Experience with PWS-driven contracts Familiarity with food service automation systems (FSM) Core Competencies Leadership & accountability Operational excellence Attention to detail Compliance-driven mindset Problem-solving and decision-making Strong communication skills Work Environment Fast-paced military dining facility Early mornings, weekends, and holidays as required High-volume food production environment Physical Requirements Ability to stand for extended periods Ability to lift up to 40 lbs Ability to work in hot, cold, and fast-paced kitchen environments Performance Expectations 100% compliance with PWS and sanitation standards Successful Government inspections with minimal deficiencies Effective staffing and labor control High customer satisfaction ratings
Pay:
$48,000.00 - $59,000.00 per year
