BOH Culinary Manager

WAGE RANGE
$50,000 to $55,000 per year + tips + bonus
POSITION SUMMARY
The BOH Culinary Manager is responsible for supporting the store GM and AGM with daily operations. Conveys a positive, high-energy can-do attitude, that inspires those around them. The Culinary Manager assists with BOH training, food preparation and food quality standards, monitors inventory levels, delivers excellent customer service, and fosters a positive work environment for all team members. Able to work in a faced paced environment prepping and mixing ingredients to the specific standards, methods, and recipe specifications set forth by Poke Express without deviation. The BOH Culinary Manager sets the example for Poke Express culinary brand standards, policies, and procedures. They provide support and assistance to both FOH and BOH operations as required. All BOH culinary employees maintain the highest standard of food safety, food preparation, and food quality at all times. Poke express employees deliver excellent customer service (to both internal & external customers) and foster a positive work environment with all members of the team.
POSITION RESPONSIBILITIES/DUTIES
Demonstrate leadership and commitment to creating a safe and positive work environment for all staff members Support GM and AGM with all daily tasks Ensure guest service and satisfaction Maintain quality control of all Poke items daily Assist in training and supervision of all kitchen preparation and activities Be knowledgeable about both BOH and FOH operations Assist in daily and weekly ordering Support monthly inventory processes Maintain and enforce all SNHD safety standards Assist with cleaning, sanitation, and organization of the kitchen, coolers, and storage areas Ensure daily prep and par levels are maintained Monitor and work to reduce food waste Receive, verify, and properly store goods received from purveyors Wash dishes, pots, pans, and cutlery using an industrial dishwasher or by hand Dry, sort, and return clean and sanitized items to their proper locations Defrost, date, and properly rotate previously frozen seafood Act as an owner of the business and as an extension of Poke Express Foster and develop positive working relationships with all team members Create a culture that exceeds guest experience and satisfaction Support management in leading a team focused on delivering the Poke Express guest experience Report maintenance issues in need of repair to GM Meet deadlines and work well under pressure Maintain clear communication with GM or AGM, seeking clarification as needed

EDUCATION, CERTIFICATIONS, EXPERIENCE REQUIREMENTS
High school diploma or GED Minimum of two years of BOH Culinary experience Efficient knife skills for mincing, dicing, julienning, and chopping vegetables Ability to butcher a variety of fin fish Knowledge of mixing all Poke, sushi preparation, and sauces Ability to stand for long periods and lift items up to 50 pounds Ability to follow company recipe standards Knowledge or experience with Hawaiian and Asian ingredients Knowledge of food allergens in all prepared food items Food Protection Manager Certification (ANAB or ANSI accredited) Must obtain a SNHD food handler manager card Knowledge of Hawaiian culture and previous poke experience in a similar culinary environment preferred
Pay:
$50,000.00 - $55,000.00 per year
