Job Description

BASIC FUNCTION
Responsible for the management of the food service operation at the Hunting Valley Campus including the planning of all special functions at the Hunting Valley campus (i.e. Home Coming, Alumni Weekend, Graduation, etc.). Management of the 9-12 nutritional needs dietary restrictions. Must be in compliance with HACCP Food Handling guidelines
MAJOR RESPONSIBILITIES
Hunting Valley Campus responsibilities:
  • Ensure the food service program follows policies and procedures and meets federal and state requirements in conjunction with the Senior Manager Food Service.
  • Oversee the monthly menu with the Senior Manager Food Service and review with Chef and Salad Bar for recipes and presentation. o Monitor all serving for quality control o Determine how food should be served and/or presented o Continually monitor new nut allergy policy
  • Menu preparation o Development
  • grades 9-12 o Strive to create new and enticing meals
  • keeping up with trends
  • Manage and coordinate the day-to-day food service operations.
  • Manage the Food Service staff. o Train new staff o Retrain staff that needs improvement o Provide feedback to Sr. Manager of Food Service daily as need and on annual performance reviews
  • In collaboration with Sr. Manager of Food Service, manage the operating budget. o Charge special functions per function o Keep special function records (food usage, weather, attendees, etc.)
  • Monitor Food Service staff performance daily, individually and group
  • Hold weekly group staff meetings
  • Maintain positive department Food Service environment o Provide enthusiastic positive to personnel motivating them to give best performance to succeed o Encourage wellness program and take advantage of Wellness program
  • Prepare monthly lunch menus and menus for special functions
  • Monitor daily food standards in accordance with the Cuyahoga County Health Department Inspection Reports
  • Prepare payroll on a bi-weekly basis
  • Monitor daily awareness of student allergies with US community
  • Responsive to preferences and/or complaints o Work with Senior Manager Food Service, parents, and Campus Nurse
  • Daily review of lunch menus and special requests
  • Sample all food items prepared in the kitchen for quality and presentation
  • Other duties: o Member of Wellness Committee o Work with faculty, students on compost program o Student Council Nutrition Committee (advisor)
  • Cleaning and maintenance of kitchen areas including all storage rooms, freezers, ovens, etc. o Establish cleaning guidelines and timetable throughout the school year Nutrition and Dietary 9-12 responsibilities:
  • Assist the Senior Manager Food Service, assess nutritional needs and dietary restrictions for all students. Counsel individual students and/or parents on the nutritional principles, dietary plans and modifications, and food selection and preparation.
  • Computerize and coordinate recipe development.
  • Develop menus for food service operations of both campuses.
  • Train staff on using and updating computerized recipes as necessary.
  • At end of lunch, review with Chef the usage of leftover items, food, etc.
SKILLS / EDUCATION
  • Minimum of five (5) years of experience in food service industry, trade, etc. within University School
  • Intermediate computer skills with Word, Excel, etc.
  • Knowledge of dietetic software a plus.
  • Creative, trendy, up to date with food service ….
  • Excellent customer service skills and the ability to work with students, faculty, and parents
  • Experience in staff development and management
  • HS diploma or equivalent / BA-Science preferred /
