Executive Director Summary of Position:
Directs and supervises personnel in Dining Services. Is responsible for planning, preparing, and serving regular and therapeutic diets to residents and personnel. Makes final selection of personnel and supervise their orientation, on the job training, and work performance. Supervises preparation and serving of food. Requisitions supplies and equipment, purchase the food. Maintains records and complies reports concerning technical and administrative operations. Manages Dining Services within budgetary guidelines.
Qualifications:
Completion of (or enrollment in) a dietary managers course by the State of Washington. Current Food Service Handlers Card. Institutional kitchen experience. Ability to tactfully deal with community personnel, residents, family members, visitors, etc. Ability to withstand sudden temperature changes from the heat of the kitchen or the cold of the freezer. Ability to read, write, speak, and understand English. Effective writing skills. Ability to taste and smell food to determine the quality and palatability. Ability to handle and manipulate equipment in supervising, demonstrating, and assisting in food preparation and serving. Must have acceptable references.
Physical requirements:
Free from communicable disease Meet community policies and procedures regarding necessary physical health. Meet the following criteria. The criteria for bending/stooping, pushing/pulling, and standing/walking must be met to be employed because they are essential functions and elements of the job. Preferred Retail food service experience
Supervisory Experience Major Responsibilities:
Essential Functions Responsible for quality and quantity of food prepared and served. Ensure that food preparation and service is in accordance with accepted state regulations and community policies and budgetary allowances. Maintain records and complete all dining service forms required by community policies concerning technical and administrative operations (i.e. number of meals served, menus, food costs, repairs to dietary equipment, personnel attendance and inventory of supplies on hand.) Make final selection of personnel and supervise the orientation, on the job training, and evaluate job performance. Schedule hours of duty and work assignments of employees on all shifts. Administer fair and consistent discipline per company guidelines equally throughout the department. Prepare and submit to the administrator a monthly cost record. Hold periodic in-service training sessions with employees Develop and post cleaning schedules for all dining services personnel. Be familiar with State Health Codes and instruct all employees in following the rules and regulations. Check files on a periodic basis for new move ins, unit changes, and census reports. Keep diet census up to date. Visit new residents within 24-48 hours to obtain food preferences and any residents that are having problems with their diets. Review food preferences periodically in conjunction with resident service plan meetings. Participate in resident service planning. Evaluate all employees per community policy. Update timed activity schedules as needed. Promote food working relations among dining services personnel. Attended to all details necessary in supervising food handling and storage and insuring sanitation in all work and storage areas. Requisition supplies and equipment and work, storage and serving areas utilized. Monitor dining room to determine acceptability of food service and note left over food on plates Maintain cooperative relations with all community staff and departments. Know fire and disaster preparedness plan and be able to fight the fire if necessary.
Other Duties:
Keep up to date with trends and development in dietary practices and techniques, evaluating their adaptability to specific dining services policies. Suggest revisions or adaptations or procedures for more efficient performance of Dining Services Department and training of employees. Attend staff meetings Is considered "on call" in case of emergencies.
