Position Summary:
Felt Poker Room & Lounge is a brand new state-of-the-art entertainment hub in Des Moines, Washington. This position offers the potential to work side by side with ownership in building the kitchen team from the ground up and operating a newly constructed commercial kitchen and restaurant. The Kitchen Manager will be responsible for managing the kitchen team and upholding the highest commitment to food quality and safety standards. The Kitchen Manager is responsible for overseeing the direction of the kitchen's daily activities to ensure guest satisfaction, profitability, and a positive, productive, and compliant work environment at Felt Poker Room & Lounge. The Kitchen Manager is responsible for the effective management and operation of the kitchen team, including scheduling, food preparation and production tailored to our menu, food cost control, compliance with King County health regulations and food safety and sanitation policies, cleaning, kitchen safety, employee training, and supervision. The Kitchen Manager must provide a high level of oversight, operational/personnel support, and leadership to ensure the smooth running of all food service operations within the poker room, where food serves a highly important role in enhancing the overall guest experience. Success is earning the loyalty of our team members and guests, measured in real growth in sales, profit, and market share, and is the result of embodying the vibrant, exciting spirit of Felt Poker Room & Lounge for our staff and patrons. This is more than a standard KM role. You'll be a highly valued, key member of our tight-knit, family-style management team. The position is open-ended based on your experience and offers real growth potential as we expand. Strong performers can earn quarterly kitchen performance bonuses tied to food quality, COGS control, and guest feedback. Key Responsibilities:
As our Kitchen Manager, you will lead by example on the line while strategically managing the entire kitchen operation: Drive Food Quality & Consistency — Oversee every shift (even when you're not physically present) to ensure every dish meets our high standards. Train and coach the kitchen team on Felt's exact recipes, plating, and presentation for our diverse all-day menu (breakfast through late-night entrées). Own COGS, Inventory & Ordering — Manage cost of goods sold, conduct weekly/monthly inventory counts, place accurate orders with vendors, and implement systems to minimize waste while maintaining toptier quality. Build & Lead the Kitchen Team — Recruit, hire, train, schedule, and develop a highperforming kitchen crew. Foster a positive, professional culture where team members grow, communicate openly, and deliver exceptional service. Create Weekly Schedules & Forecast — Build efficient kitchen schedules that align with poker room traffic, special events, tournaments, and 24/7 demand. Track productivity, labor costs, and sales forecasts. Lead Shifts HandsOn — Jump on the line during peak hours, cook alongside the team, and maintain speed, quality, and cleanliness standards. Maintain Impeccable Cleanliness & Safety — Uphold strict sanitation, food safety (HACCP), and health code standards. Keep the kitchen organized and compliant at all times. Collaborate Closely with Management — Work handinhand with the General Manager and our family ownership group on daily operations, problemsolving, and continuous improvement. Excellent communication and a teamfirst attitude are nonnegotiable. Handle Daily Operations — Resolve product outages, customer concerns, facilities issues, and any unexpected challenges quickly and professionally. Stay levelheaded under pressure.
