POSITION SUMMARY
Under general supervision, the Courtyard Bar & Grille Lead Cook will assist the Executive Chef and Executive Sous Chefs in managing the Courtyard Bar & Grille, ensuring that all food is prepped and ready to serve the guests.
ESSENTIAL DUTIES AND RESPONSIBILITIES

All duties are to be performed in compliance with Wilson Creek Winery & Vineyards policies and procedures. Prepares a variety of sandwiches, salads, wraps and other food items for cooking in ovens, grills, fryers, etc., by portioning, seasoning, and/or marinating. Assume 100% responsibility for quality of products served. Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies, and procedures. Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period. Portions food products prior to cooking according to standard portion sizes and recipe specifications. Maintains a clean and sanitary workstation area including tables, shelves, grills, food warmers and refrigeration equipment. Follows proper plate presentation and garnish set up for all dishes. Handles, stores, and rotates all products properly. Assists in and ensures completion of food prep assignments during off-peak periods as needed. Closes the Courtyard Bar & Grille properly and follows the closing checklist for all stations. Assists others in closing the kitchen. Attends all scheduled employee meetings and brings suggestions for improvement. Performs daily line checks. Monitors consistency of dishes being prepared by his/herself & other Courtyard Bar & Grille staff. Performs other related duties as assigned by the Executive Chef, Sous Chefs, or manager-on-duty.
WHAT IT TAKES TO SUCCEED
Experienced in kitchen preparation and cooking. At least six (6) months' experience in a similar capacity. Must be able to communicate clearly with managers, kitchen, and service staff. Must be able and willing to obtain a Riverside Food Handler's Certificate within seven (7) days of hire.

The employee must regularly lift and/or move up to 25 pounds and occasionally lift and/or move up to 50 pounds.

The work environment characteristics described here are representative of those an employee encounters while performing the essential functions of the job. While performing the duties of this job, the employee will be working in typical conditions of a restaurant kitchen with equipment such as walk in refrigeration units, commercial ovens, stove tops and grills. Prep stations to include working with knives and other possibly dangerous kitchen utensils and appliances. Noise level is usually moderate. Employees may encounter wet floors and extreme temperatures.
