CDM Position Summary:
The Dining Specialist is responsible for providing overall leadership, support, and guidance to the Dining Services staff within all of our communities. The Dining Specialist maintains and enforces the Dining operations in the absence of the Dining Services Director within a specific community. While working in the community, the Specialist ensures basic systems and standards are being initiated, kitchen operations are organized, clean, and fully functioning, and staff members understand the expectations of their job duties. The Specialist will also be required to assist or lead the onboarding plan for the new Dining Services Directors.
Essential Duties:
Manage the kitchen of the community you are supporting and provide meal service in the absence of the Dining Services Director. In collaboration with the Dining Services Director, evaluate the food program, educate the staff on dining knowledge, ensure dining procedures and practices are being followed, establish plans for the kitchen and ensure assigned communities are 100% compliant with all required guidelines (clean, safe, and sanitary environment). Monitors the implementation of current Dining policies and procedures, which reflect adherence to corporate and external regulatory guidelines. Reviews new regulatory directives and implements changes as needed. Responsible for interviewing, hiring, training, developing, and evaluating assigned staff. Complete all required reports, and logs, and conduct Dining and sanitation evaluations on a regular basis with follow-up. Reviews and facilitates partnerships with outside vendors as needed. Implement and monitor Dining strategies that enhance profitability for the organization. Ensure food orders are placed following the proper ordering process In collaboration with the Dining Services Director, manage to the community's food & labor budget. Motivate, inspire, train, and coach the community team to implement the brand's dining vision and exceed performance targets. Maintain a working knowledge of and ensure compliance with all governmental regulations. Travel is extensive and required (up to 100%) Plan and execute menus based on Charter standard menus provided with accommodations based on community-specific resident preferences.
