Job Description

The Food & Beverage supervisor oversees Bar Moxy, Rose's Coffee Shop, Banquets, and Sip & Dip pool within The Moxy Hotel. The Supervisor is to provide overall operational oversight for the outlets. The Supervisor leads all service, administration, and guest relation activities. This hospitality professional will provide for the highest quality products and services to our clientele. Ensure areas are properly and fully booked to ensure maximum revenue without sacrificing service. Ensure ambiance of this boutique restaurant including music, lighting and atmosphere are in compliance with the standards set forth the by the General Manager. Train staff in accordance with the standards of Wurzak Hotel Group and Tribute Portfolio (Marriott) Hotel policies and guidelines, ensuring proper knowledge of all company procedures, rules and regulations. Constantly evaluate staff to insure the highest standards of service excellence. Provide for the proper reporting of all revenue and manage all the costs of the restaurant. Ensure they are in line with the budget and/or guidelines. Interview and hire all new employees, ensuring all paperwork is properly completed and employee files are in compliance as per Human Resources. Oversee the processing of time clock management for your staff. Ensure the labor cost is accurate and up to date, and all employees are properly paid. Oversee restaurant management to ensure they fulfil responsibilities for staff development, scheduling, and followup. Responsible for creating and maintaining all side work schedules for all departments. Responsible for all menus to be up to date, neat and clean and that all personnel have up to date menu descriptions. This includes all new specials. Ensure restaurant is clean and in compliance with all local and Company sanitation and food safety guidelines. Ensure staff is in compliance with the Company policy. Oversee inventory of all small wares, glassware, china, silver, linen and all other necessary items for the restaurant. Ensure the proper storage and inventory of all. Strong knowledge base of fine wines, wine selection and service. Sets high standards of wine service and trains staff accordingly. Maintains the restaurant wine list and recommends additions / deletions as needed. Oversee the beverage/wine program. Ensure all costs are accurate and in line with the budget guidelines. Provide oversight and management to the Polo Lounge and InRoom Dining, to include staffing, training and operations. Ensure all beverages are properly inventoried and stored to prevent theft. Conduct weekly meetings with staff. Attend preshifts as necessary. Responsible for the quality of the food and the presentation insuring guest satisfaction in this area. Promote teamwork within the restaurant, creating a positive work environment. Oversee the restaurant culinary team to ensure understanding of costs, quality, proper purchasing and receiving along with compliance to preparation and presentation standards. Ensure staff comply with all guest service basics such as uniforms, nametags and proper guest greeting. Creates an environment that impresses guests with quality and timely service in a pleasant and friendly manner. Ensures all communication containing Company, hotel and brand information is consistent with practices of the hotel. Handle all guest complaints, addressing each individually, personally and in a timely manner. Coordinate resolutions with Director of Food & Beverage and other stakeholders. Perform special projects and other responsibilities as assigned. Participate in task forces and committees as requested. Ensure maintenance problems are promptly reported through proper channels. Practice safe work habits and comply with sanitary, safety, security and emergency procedures. On time and at work when scheduled in clean, professional attire.
