Director of Food & Beverage Rate of Pay:
$120,000 - $130,000 Opportunity Awaits on the beautiful Island of Hawaii... King Kamehameha Kona Beach Resort Courtyard by Marriott currently has an opening for a talented Full Time Director of Food & Beverage to share the aloha spirit and strive to create a memorable guest experience.
Brief Summary of Job:
Overall leadership and strategic direction for the resort's Food & Beverage division. Essential Functions and Responsibilities of the job include but are not limited to: Providing services that are above and beyond for guest satisfaction and retention. Utilizing interpersonal and communication skills to lead, influence and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example. Encouraging and building mutual trust, respect, and cooperation among team members. Responsible for food and beverage daily operations, including culinary, restaurants/bars, banquets, and team member cafeteria. Overseeing budgeting, forecasting, labor management, purchasing, and inventory control with a focus on financial performance and creative revenue generation. Ensuring the food and beverage/culinary operation meets customer needs, ensures employee satisfaction, and focuses on growing revenues and maximizing the financial performance of the department. Developing and implementing Food and Beverage promotions, strategies, and special events in conjunction with the Executive Chef and the Director of Sales. Collaborating with the Executive Chef on menu engineering and portion control, ensuring the highest food standard is achieved whilst selling at the correct prices. Ensuring compliance with all relevant workplace health and safety and Occupational Health & Safety legislation, and related Marriott policies. Driving corporate or resort specific programs that affect guest satisfaction and profitability in the outlets. Responsible for the development and maintenance of all policies, procedures, and quality standards within the department, utilizing a continuous improvement approach to ensure a high quality, cost effective and customer focused operation. Ensuring correct liquor licensing laws are abided by. Supervising daily functions of the department, including staffing levels to ensure that guest service, operational needs, and financial objectives are met. Negotiating food and beverage contracts within corporate guidelines Promoting safe work practices. Interviewing, selecting, reviewing, training and performance managing team members. Assigning duties and scheduling staff, balancing needs of resort and productivity standards. Monitoring staff activity and coaching performance. Administering payroll edits, reporting and time & attendance policies. Providing assistance to other team members and departments to contribute to the best overall performance of the department and hotel. Performing other duties as assigned, requested or deemed necessary by management. •Management retains the discretion to add or change the duties of the position at any time.•
Requirements Knowledge/Education/Experience:
Proficient in Microsoft Office applications. College degree preferred or equivalent experience. Minimum of five (5) years of experience as a Director of Food and Beverage in a hotel/ resort organization required. Experience in a union environment is required. TB clearance card required.

Ability to develop and maintain effective guest relations. Ability to direct performance of team members and follow-up with corrective action where needed.
