Position Summary:

The Director of Culinary Services is to coordinate all dietary services employees and activities to ensure the ongoing service of a nutritious and attractive quality food service program. This position hires and trains staff and provides supervision to dietary personnel. Ensuring that appropriate sanitation and safety practices are followed by dietary service staff, and working with other Care Center departments to assure residents receive good customer service. Services are provided in accordance with the mission of Guardian Angels.

Responsibilities:

Coordination of department activities and employees to ensure the ongoing service of nutritious and attractive quality food service program Responsible for interviewing, hiring, personnel issues, development, supervision and scheduling of Dietary Services staff Responsible for food presentation, production, quality and maintenance of menus and seasonal rotation Conducts cooking demonstrations and training to staff on proper cooking techniques and new menu items Works closely with residents to ensure they receive quality nutritional service Ensure appropriate sanitation and safety practices are followed in all area related to culinary services Ensures all equipment and tools are maintained in appropriate and good working condition Plan, direct, supervise and valuate work force in preparation, cooking, and serving of regular and modified-diet meals for residents, guest and employees Plans and prepares food for special events Conducts dining room observations and department audits Maintains inventory of food and nonfood items. Insures all food in refrigerator, freezer, and dry storage are labeled and dated Ordering of supplies, maintains inventory levels, checks with vendors in regards to pricing and quality Maintains all records: meal counts, invoices, cleaning charts, temp. charts, and staff time sheets Responsible for monitoring dietary budget, makes suggestions regarding budget changes, food costs and equipment needs Policy and procedure development and review To assist in providing a dignified, respectful, resident-centered environment for residents Maintains knowledge of current knowledge of food service standards and guidelines in accordance with state and federal regulations Follows universal precautions, facility infection control guidelines, sanitation and safety standards of practice in all work and activities All duties will be performed in accordance with current standards, guidelines, state and federal regulations Position may require extra hours, including weekends and occasional evenings Provides support through weekend manager on duty rotation Uphold confidential information as required by Guardian Angels Care Center policy and procedure and as related to HIPAA Uphold the mission, vision, and values of the Guardian Angels of Elk River Performs other duties as assigned

Qualifications:

High school diploma or equivalent required Associates degree or certification in food services, nutrition services or dietetics or related field required Certified Dietary Manager certification preferred

SERVSAFE

certification required Five years related experience in a food service setting, including three years supervisory experience required. Must have computer skills with Microsoft Office a plus. Basic knowledge of equipment maintenance and use required. Must have knowledge of state and federal regulations as they relate to food and catering trends, with a focus on quality, production, sanitation, food cost control and preparation. Excellent verbal and written communication skills.
