Job Description

JOB SUMMARY
The Food & Beverage Director is responsible for overseeing restaurant operations at multiple G PEG casinos to maintain standards of excellence in quality and service while maximizing profits. All employees are expected to conduct themselves in a manner which demonstrates friendliness, initiative, professionalism, personal awareness and integrity while exercising confidentiality in the appropriate areas of their performance.
RESPONSIBILITIES
Promote positive guest relations by projecting a courteous, helpful attitude and assisting guests and employees throughout the restaurants and casinos Ensure smooth daily operations across the organization with a focus on efficiency, quality, cleanliness, safety and service standards Manage annual F&B budgets, forecasts and P&L performance Monitor labor and expenses to assist with implementing controls and identify opportunities for revenue growth and cost savings across all outlets Assist with managing staff including scheduling, hiring, training, coaching, reviewing performance, documenting and rewarding Ensure proper staffing levels, labor control and operational efficiency at each property Develop training plans and assist department supervisors with ensuring staff are properly trained to increase and maintain competency levels Assist with ensuring proper portioning, presentation and consistency of menu items through training and inspection Foster a culture of accountability, communication and collaboration Establish clear expectations and performance standards Ensure seamless coordination between front-of-house and back-of-house teams Support employee engagement, retention and leadership development Solicit customer feedback, address issues and follow up to improve service and ensure guest satisfaction Assist with overseeing inventory controls, procurement and vendor relationships Fill in where needed to ensure guest service standards and efficient operations Fully understand and assist in compliance with all federal, state and county regulations that pertain to health, safety, labor and gaming requirements Must ensure compliance with verbal and written directions, policies, and procedures and assist with administering prompt, fair and consistent corrective action for any violations Regularly provide information to Operations leadership regarding guest and employee feedback, problems that may arise and any safety concerns throughout the property to ensure a quality and safe environment Show willingness and effort to work as a team Perform other duties as assigned
QUALIFICATIONS
Must be at least 21 years of age Leadership experience required with specific knowledge of all phases of restaurant operations Demonstrated ability to lead large teams and manage multi-outlet operations Strong financial acumen and experience managing budgets Proficiency with computer systems, communication platforms and reservation tools required; experience with InfoGenesis POS preferred Knowledge of proper service techniques Must possess excellent communication and organizational skills Must pay attention to detail including cleanliness and safety Professional demeanor, positive attitude and excellent people skills with ability to courteously and efficiently interact with guests and lead a team Ability to communicate effectively and listen attentively Ability to multitask in a high-volume environment while maintaining service standards Ability to bend, stand, walk and exert well-paced mobility during entire shift Ability to lift up 25lbs on a regular basis and up to 75lbs occasionally Ability to work in a noisy, smoking casino environment Flexibility required to work varied shifts, including weekends and holidays
