Description:
The Sushi Shift Lead encompasses all responsibilities of a Sushi Chef while also supporting the Senior Sushi Shift Lead in daily production and service needs. This includes maintaining proper sanitation and cleaning standards, supporting inventory storage and handling, assisting with food quality and presentation, and helping to develop staff skills. The role also serves as a bridge between the sushi team and senior leadership, reporting directly to the Senior Sushi Shift Lead and providing support in broader responsibilities such as vendor management, menu development, and quality oversight. Additionally, the Sushi Shift Lead plays a key role in supporting and strengthening our Sushi program by helping to design and implement knowledge-sharing initiatives across all FOH staff. This role partners closely with FOH leadership to ensure staff are well-equipped with product knowledge, service techniques, and brand standards. The Sushi Shift Lead will help shape and deliver client facing sushi experiences, ranging from educational programs to expanded catering, broadening the reach of our sushi program.
Key Duties and Responsibilities:
Continued Sushi Chef Prepare sushi boxes and customer orders Set up and break down the sushi bar station Keep a clean, organized workstation Prep ingredients, including breaking down and portioning tuna, Hamachi, and salmon Make precise cuts of fish loins and fillets for sushi Plate and present dishes with care and precision Engage with guests in a professional, friendly manner Demonstrates and incorporates the LP6 Core Values in every action. Performs other duties as assigned. Support Senior Shift Lead Train new and existing Sushi team members on role responsibilities and updated procedures. Assists in the development and execution of new menu items and specials. Assists in reviewing daily PARs and placing vendor orders as needed. Helps manage weekly scheduling updates and communicates changes to the team as needed. Records end-of-month inventory for the Sushi Department. Ensures all cleaning checklists, waste sheets, and temperature logs are completed and filed accurately. Ensures sushi staff follow Department of Health (DOH) protocols. Performs other duties as assigned. Sushi Shift Lead Supports weekly lineups with the Front of House team to review Sushi specials and strengthen staff product knowledge. Leads menu tastings and product education sessions for Front of Hour new hire onboardings. Partners with FOH managers to address hospitality challenges and deliver timely, constructive feedback to staff. Collaborates with management to design and execute guest-facing sushi experiences (i.e., education programs, tastings, catering). Supports operations by stepping into any sushi role as needed and performing other assigned duties. Performs other duties as assigned.
Qualifications:
3 years in various Sushi kitchen prep, cook or chef roles Previous team leader or supervisory experience is preferred English fluency required; bilingual ability (Spanish/English) is a plus Computer literate; Microsoft Office applications a plus Strong communication and problem-solving abilities Focused on delivering exceptional Hospitality Able to work well under pressure in a fast-paced environment Proven ability to foster teamwork and collaboration among staff Demonstrates strong personal reliability and holds team members accountable to the same standard
Compensation & Benefits:
