OVERVIEW
We are seeking a Food Technician to join our team, and provide engineering support to the Combat Feeding Division in the areas of biotechnology and fermentation processes, including biochemical, catalysis, electrochemical processes relating to biosynthetic production of foodstuffs.
GENERAL DUTIES
Work with the Armed Forces Recipe Service (AFRS), developing, updating and testing standardized recipes, addressing categories of recipes as specified by the services, for use across all Services. Work includes researching recipes, preparing test sheets, conducting nutrient analysis with Genesis SQL, lab trials, writing completed recipes, reviewing recipes developed by teammates (both editorially and via lab validation) and photographing recipes Contribute to writing and editing Guideline Cards as well as contribute to developing culinary training and toolkits that will be featured on the military nutrition environment website where AFRS and Go for Green® content is posted Continue to establish best practices for capturing photos of all recipes as they are developed or revised Ensure all recipes are photographed and the photos properly filed and posted Maintain all test data, recipe documents, guideline cards, training and other project materials in the AFRS shared environment (MS Teams/SharePoint) Support AFRS recipe update and new recipe development initiatives and assure that sufficient personnel are available to meet ongoing customer needs/requests Use their knowledge of nutritional sound recipes and menu development. The contractor will also apply their knowledge of good food service practices and nutrition analysis to meet customer demands for new and updated recipes as well as contribute to the improvement and maintenance of the extensive AFRS recipe database.
REQUIRED QUALIFICATIONS
Have 2-4 years of experience in recipe/menu development with emphasis on nutritionally sound foods Have experience with food photography Have experience with nutrient analysis using ESHA Genesis nutritional software or similar preferred Possess excellent analytical and problem-solving skills Have strong communication skills to work with stakeholders and team members effectively Be able to manage multiple projects and priorities in a fast-paced environment.
DESIRED QUALIFICATIONS
ServSafe Food Safety and Sanitation certification Experience in food service in a restaurant or bakery, and /or product development or receipt development/testing setting Experience with Military commodities Bachelor's degree in Food and Nutrition, Culinary Nutrition, or a related field.
