Job Overview:
The Pastry Production Supervisor, reporting to the Bakery Production Manager, oversees daily leadership and production of pastry products in the absence of the bakery production manager and helps coordinate pastry team member area assignments to ensure proper timing is achieved. Also ensures team members are efficiently managing time and are staying on task to maximize productivity, and assists in new hire training.
Duties/Responsibilities:
Production Leadership
  • Act as a source of knowledge, giving direction to production team members in the absence of the production manager or Director of Operations. Delegate tasks to other team members in the absence of the production manager. Continuously work to expand pastry knowledge and skill set. Set a positive example in the department of station cleanliness, task prioritization and efficiently. Training
  • Participate in new hire training, working to train all team members on all tasks and roles in production. Work with new hires to ensure their training schedules are clear and well documented. Provide accurate and constructive feedback to trainees. Provide fair and honest assessment to bakery leadership of team member progress and performance. Labor Management
  • In the absence of the production manager, ensure team members are arriving on time. Monitor overtime, making needed adjustments. Learn the structure of the team schedule, training on how to write it. Daily Production Supervision
  • Work in production 4-5 days a week to achieve hands-on involvement of the program.
Ensure timely execution of daily production for both café accounts and external wholesale accounts. Quality control of daily items, troubleshooting to solve issues. Communication with production manager on any shortages or lost items. Ensure items are produced in time for driver pick up. Assume supervision of different areas of bakery operations: production, delivery, etc. Ordering/Ingredient Procurement
  • Work with bakery leadership to learn about different vendors and their preferred ordering methods. Assume responsibility for ordering from at least one vendor. Assist with inventory counts and general procurement questions. Communicate with leadership on any anticipated out of stock issues. Department Leadership
  • Attend monthly bakery planning meetings.
Attentive to communication requests. Utilization of Outlook calendar to stay connected to the leadership team.
Physical Demands and Requirements:
Must be able to lift 50-pound bags of flour. Shifts are up to 12 hours and require standing all day long without breaks.
Supervision Received:
This position will report directly to the Pastry Production Manager.
Supervision Exercised:
This position will supervise pastry team members.
Qualifications/Skills:
3+ years of training and experience in the baking industry. 1+ year experience with Ibis or equivalent bakery. Detail oriented. Ability to work well on a team. Solution-oriented. Self-motivated. Creative. Capacity to receive direction from supervisors. Proficient at math and Excel. Organized and efficient. Flexible schedule. Budget-conscious. Clear communicator. Holiday work may be required depending on production demands. Varying early start times necessary to complete the bake in time for opening business hours. Deals with confidential information and/or issues using discretion and judgment.
