This hands-on role is responsible for preparing large batches of fillings and masa while maintaining the highest standards of food safety, quality, and consistency. This position is ideal for someone with food production, manufacturing, or commercial kitchen experience who enjoys structured work, takes pride in quality, and can follow established procedures in a fast-paced environment. What You'll Do Prepare large batches of fillings and masa according to recipes and production schedules Operate industrial kitchen equipment, including tilt skillets and other production equipment Accurately weigh, measure, and stage ingredients Monitor cooking processes to ensure consistency, quality, and food safety Verify internal product temperatures and complete required documentation Execute and document proper cooling procedures Complete production records, temperature logs, and traceability documentation Follow HACCP plans, USDA regulations, and Good Manufacturing Practices (GMPs) Maintain a clean and organized work area and perform routine sanitation tasks Identify and report food safety, quality, or process concerns What We're Looking For Experience in food production, food manufacturing, commissary kitchens, or commercial kitchens preferred USDA-regulated facility experience is a plus Knowledge of HACCP and food safety practices is helpful Strong attention to detail and ability to follow established procedures Reliable attendance and a strong work ethic Ability to work independently and as part of a team Basic math and recordkeeping skills Ability to read and write in English Training provided for the right candidate Physical Requirements Ability to regularly lift up to 50 pounds Ability to stand for extended periods throughout the shift Ability to safely work around hot equipment and cooking operations Ability to perform repetitive tasks in a production environment Why Join El Porteño?
