Head Distiller About Us Dam Whiskey Corp. is a new craft micro distillery opening in Southside Chattanooga. We produce premium bourbon whiskey , moonshines , vodka , and other specialty spirits using traditional methods and high-quality local ingredients. We are building a state-of-the-art production facility alongside our tasting room and event space, with a strong focus on quality, consistency, and innovation in craft distillation. Position Overview We are seeking a reliable, detail-oriented, and safety-conscious Distillery Operator to join our production team. This is a hands-on weekday role responsible for the daily operation and maintenance of our distillation equipment and processes. You will work directly with the Head Distiller to produce exceptional spirits while maintaining the highest standards of quality, cleanliness, and regulatory compliance. Key Responsibilities Operate and monitor all stages of the distillation process, including mashing, fermentation, distillation, and spirit collection. Maintain and clean distillation equipment, tanks, pumps, and production areas following strict sanitation protocols. Perform daily quality checks, including proofing, pH testing, and sensory evaluation. Assist with raw material handling, ingredient preparation, and inventory tracking. Follow detailed production schedules and batch recipes to ensure consistent quality of our bourbon, moonshine, vodka, and other spirits. Package and prepare spirits for barreling, bottling, or sampling as needed. Strictly adhere to all TTB, Tennessee ABC, safety, and food safety regulations. Maintain accurate production logs and batch records. Troubleshoot minor equipment issues and coordinate maintenance when required. Support occasional cross-training with the bar and tour teams.
Qualifications Required:
Previous experience in a distillery, brewery, winery, or food/beverage production environment (1+ years preferred) Strong mechanical aptitude and ability to operate complex equipment High attention to detail and commitment to quality Ability to lift up to 75 lbs, stand for long periods, and work in warm/humid conditions Reliable transportation and excellent attendance Must be able to pass background check and obtain necessary federal and state permits
Preferred:
