Role Overview The Culinary Team Leader is responsible for leading and overseeing all aspects of Wilder's prepared foods programs, including the culinary kitchen, coffee and juice bar, chef driven hot and cold bar, and a substantial packaged grab and go assortment. This role combines hands-on culinary leadership with operational excellence, ensuring that our culinary department delivers on Wilder's mission: nourishing food, exceptional hospitality, and uncompromising standards for quality and safety. Responsibilities Operations Leadership Oversee day-to-day operations of all culinary venues (kitchen, coffee/juice bar, hot bar, cold bar,fresh pack). Uphold the highest standards of culinary execution, food safety, sanitation, and compliance. Create and manage menus, prep lists, production schedules, ordering, and service execution to ensure consistency and excellence. Partner with the General Manager and other department heads on menu innovation, seasonal offerings, and customer experience. Hire, train, and lead a team of cooks, baristas, prep staff, and line leads. Write and manage weekly staff schedules to optimize labor efficiency while maintaining service excellence. Handle staff HR matters, including recognition, coaching, and corrective action. Build a culture of wellness, hospitality, and accountability within the culinary team. Model and deliver exceptional customer service; set the tone for hospitality in prepared foods. Act as a visible presence in the venues to engage with customers and ensure service excellence. Collaborate with the store team to integrate culinary experiences into Wilder's broader wellness mission. Merchandising Leadership Place and manage orders for all prepared foods categories; coordinate with vendors and distributors. Manage daily/weekly inventory counts and reporting. Control costs by minimizing shrink and optimizing portioning and production. Enforce shelf life standards and rotation practices; maintain production logs and documentation to support recall execution and regulatory inspection readiness. Track and deliver against department
KPIs:
labor %, food cost, throughput, and waste reduction. Maintain accurate PLU mapping and category setup for all prepared foods; conduct routine audits to ensure POS data aligns with approved recipes, ingredients, and assortments. Oversee scale programming, tare logic, packaging weights, and portion standards; perform regular accuracy checks to ensure compliance with Weights & Measures regulations and protect margin. Ensure ingredient statements, allergen declarations, nutrition panels, and date coding reflect current recipes and approved formulations; maintain alignment between recipe updates and labeling. Ideal Background 5-7 years of culinary or prepared foods leadership in premium grocery, natural markets, or chef driven foodservice (Whole Foods Market, Erewhon, Sweetgreen, etc.). Proven ability to manage a kitchen and front facing prepared foods program (hot bar, grab-and-go, juice/coffee). Strong background in food safety, sanitation, and compliance (ServSafe certification required). Experience managing scheduling, ordering, inventory, and labor within budget targets. Strong leadership and communication skills; ability to coach and inspire large teams.

Physical & Schedule Requirements Full-time role with flexibility to work evenings, weekends, and holidays as needed. Ability to stand and be on feet for entire shift (8+ hours). Must be able to lift at least 50 pounds repeatedly. Comfortable working in a fast-paced, high-volume environment with hot and cold conditions.
