Job Summary:
Direct field feeding operations for a government contracted Mobile Food Services Unit. Ensure strict compliance with agency performance work statements, USFS requirements, and federal food safety mandates in austere environments.Duties/Responsibilities:
- Enforce all USFS National Mobile Food Services Contract specifications daily.
- Manage strict adherence to contractually mandated service timelines and menus.
- Manage high-volume output of up to 1,500+ meals per shift.
- Oversee rapid deployment, setup, and teardown of mobile kitchen assets.
- Manage remote supply chains including potable water, fuel, and graywater disposal.
- Navigate complex field environments under variable weather conditions.
- Monitor staffing levels to ensure MFSU is properly staffed at all times.
- Provides input to the Fire Pod Administrative Manager to ensure sufficient staff is hired for the Fire Pod and coordinates times to meet on the Job Site/Mobilization.
- Makes initial contact with governmental representatives and/or corporate clients to get information on facilities and logistics. The Fire Pod Manager determines where to set-up camp, estimated numbers to be fed, time frames for serving, and potential for spikes. Sets up meeting with Food Unit Leader.
- Coordinates all necessary equipment and supplies. Works on bringing in communications lines, coordinates with water tenders and fuel tenders if available.
- Tracks and monitors employee hours, ensuring equal distribution of overtime.
- Coordinates with Kitchen Manager and Inventory Lead to determine products on hand for first menu.
- Records all menus, serving times, meal counts, personnel lists, and mileage.
- Takes all orders from government agents and/or corporate client representatives and informs appropriate staff members.
- Completes invoices with USG, ensuring accuracy and timeliness.
- Ensures safety meetings are held. Assists in preparation and completion of accident, injury or illness reports and submission to appropriate entity.
- Ensures that Job Site/Mobilization is maintained in a clean and orderly fashion and that staff is appropriately supervised.
- Makes every effort to resolve issues by consulting with concerned parties, whether governmental agents or employees.
- Reviews and signs off on government evaluation of job.
Required Education, Certifications, Licenses, and Experience:
- ServSafe Food Protection Manager certification or equivalent ANSI National Accreditation Board and the Conference of Food Protection Certificate
- 2-3 years experience working in a fast paced food service environment.
- 2-3 years experience in a supervisor or managerial position.
Preferred Education, Certifications, Licenses, and Experience:
- Experience working in a field / non-standard environment.
- 3-5 years experience working as Unit Manager or Supervisory position on National Mobile Food Services Unit.
- 3-5 years experience managing feeds of 150 - 1,500 people per meal under tight deadlines.
Work Environment:
Employees may be exposed to extreme cold or hot weather conditions, fumes, or airborne particles, toxic or caustic chemicals, and loud noise.Physical Requirements:
Employees may be required to remain in a stationary position, stand, push, pull, climb, kneel, crawl, balance, squat, bend, and reach. Employees may be also required to use gear to move items around, including, but not limited to, carts and dollies. Employees may also be occasionally required to lift and/or move up to 49 pounds.
