Position Criteria:
High school education or equivalent 2 years experience in high quantity food service management ServeSafe certification is required within 90 days of hire.
Performance Criteria:
Keyholder:
Key holder: Opens and unlocks facility, starts all equipment, checks and logs equipment temperatures to ensure food safety. Set up the cafeteria and kitchen for the day. Final close down daily to ensure safety guidelines are met. Data entry and records including creating and maintaining preparation lists, signage, production records to project for present and future production to limit waste/cost, and email communications/follow up. Oversee and participate in preparation of breakfast(30-125 meals/day) and lunch meals (300 - 800 meals/day) and various a la carte items(~$18,000 - 30,000/monthly). Food Preparation including washing produce, cutting, mixing, temping foods, preparing frozen food for cooking, labeling food, etc.. Recording production information on production sheet. Cooking foods in commercial ovens, steamer, warmers, microwave, kettles/skillets. Monitor serving area to prevent theft Ensure food safety including temperature checks, routine equipment maintenance, and proper cleaning/sanitizing. Managing inventory, creating orders, and receiving deliveries for a building with enrollment around 500-1000 students. Coding delivery invoices. Verifying cash deposits at the end of day. Cashiering, money handling, end of day PrimeroEdge duties, parent negative balance calls Day to day supervision, guidance, development and delegation of duties, and training for staff of approximately 4-7 staff members. This includes daily feedback, documentation, cross training on equipment/duties as well as annual performance reviews and input in site hiring decisions. Assist Dietitian with Special Diets which includes reviewing Special Diet menus and guidelines developed by Dietitian, reading food labels, and ordering special diet foods. Additional attention is made to prevent cross contact and safe food for service. Communicates with Dietitian, parents/guardians, nurses and teachers/building staff related to student needs Approve assigned kitchen staff's time Time and Attendance website to review, verify and approve hours worked and leave. Compliance requirements including monthly supervisor meetings, monthly safety training, USDA posting requirements, as well as preparation for passing state and health inspections. Manage WeeCares food service program, where applicable. (Timberline & Prairieview) End of year inventory and closing kitchens for summer.
Physical Demands:
The Kitchen Production physical job demands require occasional maximum lift of 30 lbs. from knuckle (10") to waist; occasional lift waist to overhead of 15 lbs; Occasional horizontal push/pull of 35 lbs. of force; occasional maximum carry of 30 lbs. for 10 ft; Constant grip strength of 20 pounds; frequent hand coordination; frequent bending, standing, reaching forward; occasional crouching/kneeling or sitting.
