Pizza Cook

The Cook prepares pizzas, sandwiches, and lunch/dinner menu items to order during lunch, dinner, and weekend service. This role manages the hot line and pizza station, executes recipes to spec, and keeps the kitchen running cleanly and on time through peak service. The Cook maintains ticket times and production pace consistent with restaurant standards during peak service.

ESSENTIAL FUNCTIONS & RESPONSIBILITIES

Build pizzas to standardized recipe specs, including sauce application, cheese measurement, topping placement, and bake times for the Standard Pizza Build and specialty pies (Chicken Ranch, BBQ Chicken, Buffalo Chicken, and others on the current menu). Prepare sandwiches to spec (Reuben, Classic Club, Roast Beef Cheddar, Spicy Italian, Turkey Bacon Swiss, and other menu items). Operate the pizza oven, flat-top, grill, and fryer safely and in accordance with training. Execute prep batches from recipe cards: meatballs, pulled pork, chicken sauce mix, sauces, and other daily prep items. Operate and clean power-driven equipment (dough mixer, slicer, food processor) in accordance with safety training and manufacturer guidelines. Plate dishes to posted plating guides; call out tickets and coordinate timing with the rest of the line. Maintain cleanliness and sanitation of the line, equipment, walk-ins, and prep areas throughout the shift; follow opening and closing checklists. Receive and rotate stock (FIFO); log cooler temperatures; label and date all prepped items. Comply with PA Department of Agriculture food safety rules and county health department requirements. Work collaboratively with kitchen and front-of-house team members to ensure efficient, accurate, and timely service. Follow portioning and recipe standards to minimize food waste and control costs. This position is safety-sensitive and requires strict adherence to all safety procedures. Perform other job-related duties as assigned to support restaurant operations.

REQUIRED QUALIFICATIONS

Minimum age 18. This role includes baking, operating power-driven kitchen equipment, and cooking with equipment (open flame, pressure fryers, high-speed ovens) that federal law prohibits for workers under 18. Ability to read and follow standardized recipe cards and plating guides in English. Basic math for scaling recipes and measuring ingredients. ServSafe Food Handler certification, or willingness to obtain within 30 days of hire (cost covered).

PREFERRED QUALIFICATIONS

One or more years of experience as a pizza cook, line cook, or prep cook. Experience in a scratch-made or high-volume pizza kitchen.

PHYSICAL REQUIREMENTS

Stand and walk on hard kitchen surfaces for the duration of a shift (typically 6-8 hours, up to 10 on weekends). Lift and carry up to 50 pounds occasionally (dough, flour bags, stock deliveries); lift up to 25 pounds frequently. Reach, bend, stoop, and squat to access low shelving, ovens, and walk-in refrigeration. Use hands and fingers for knife work, pizza assembly, and plating with precision. Tolerate a hot, humid kitchen environment with exposure to open flame, hot oven surfaces, hot oil, and steam. Work safely with cleaning chemicals and sanitizers.

WORK SCHEDULE & AVAILABILITY

Foxburg Pizza is open seven days a week, and Sunday is one of our highest-volume days. Sunday availability is an essential function of this position because we cannot operate without staffing every open shift. We build schedules around posted business needs, and candidates must be available to work Sundays on a regular, recurring basis. The Cook must maintain regular, reliable attendance and punctuality for all scheduled shifts.
