Store leader (Cafe Manager The Grey Store - Culver City CA ) The Store lead (Cafe Manager) is the on-site leader responsible for keeping daily operations running smoothly and maintaining The Boy & The Bear's service, coffee, and presentation standards. This is a hands-on, hourly leadership role focused on guiding the team during shifts and ensuring consistency on the floor. This position does not have authority over hiring, termination, pay decisions, or formal disciplinary actions. Those responsibilities remain with the Area Manager and company leadership. You are the person ensuring the coffee experience consistency, a calm, elegant and friendly environment is created, and financial excellence at your store is always there. You represent The Boy & The Bear on the floor maintaining exceptional standards of visual presentation (OCV), coffee quality, and warm, coffee-driven customer connection. Every decision and interaction reflects our 3 Pillars of Success. While this role provides guidance, training, and performance feedback to employees, it does not exercise independent judgment with respect to matters of significance such as hiring, termination, compensation decisions, or final disciplinary action. Role Mindset As the The Store lead (Cafe Manager), you are both a coffee professional and a cultural ambassador of The Boy & The Bear. You are coffee quality driven , every extraction, pour, and gesture reflects respect for the craft and commitment to excellence. Minimum 3+ years in specialty coffee, with proven skills in espresso calibration, milk texture, and manual brewing methods (V60, Kalita, French Press, AeroPress.).Leadership:
Demonstrated ability to lead a team, communicate clearly, and maintain consistency and composure during high-volume service always with the highest degree of professionalism.Quality Focus:
Proven record of maintaining product standards, cleanliness, and presentation under pressure, achieving strong OCV or visual audit performance. Your coffee extraction and Latte Art skills are consistent and above average.Customer Connection:
Naturally warm and professional, able to create coffee-driven conversations and deliver calm, refined hospitality.Professionalism & Culture Fit:
Maintains personal presentation and discretion at all times, promotes teamwork, discourages negativity, and embodies TB&TB's design-driven, intentional philosophy. Key Responsibilities Operational Leadership You are available and capable of opening and closing the café with precision and accountability. Ensure the store remains open and operational at all scheduled times by effectively managing staffing coverage and operational contingencies. Maintain smooth, efficient service flow and full readiness across all stations. During peak rushes, ensure order turnaround times remain within our maximum limit times, always balancing speed with quality and customer experience. Execute shift checklists with 100% completion and accuracy. Communicate store needs, issues, and feedback to the Area Manager daily.Financial Success:
As the Cafe Manager you are responsible for the success and excellent financial performance of your stores at least at 95% success rate. Keep track of all set KPIs above for your store on a monthly and quarterly basis , ensuring financial performance and operational discipline remain within the approved budgets and targets. Work in alignment with your Area Manager and uphold accountability for every financial and operational outcome within your location.KPI:
Maintain expenses (COGs + Labor) within the designated budget percentage and achieve a minimum of 95% success rate on monthly and quarterly financial performance reviews for your store. No recurring financial underperformance issues within 1 quarter in a year. OCV (Overall Café Visuals) Ensure the café is presented at its best at all times by conducting daily OCV visual checks before and after each shift. - Maintain 95%+ OCV audit results from Ownership, HR, and Area Manager. - No recurring cleanliness or OCV presentation issues within a quarter . Coffee Quality & Product Presentation Execute espresso extractions with precision and consistency at all times. Maintain amongst your staff flawless milk texture = silky, shiny, and with true micro-foam quality on every drink. Perform pour-over extractions with precision and consistency; taste or spot-check extractions regularly to ensure quality. Audit beverage and food quality throughout service; stop and correct any product that does not meet TB&TB standards before serving. Engage with customers after service to confirm that product quality meets both TB&TB's and their expectations. Ensure all latte art meets company standards; any drink not meeting expectations must be re-made immediately and not served. Verify that every drink meets standards for taste, temperature, and presentation (plating) before being served. Maintain organized, well-stocked, and visually balanced pastry and retail displays = never piled or cluttered. No products, merchandise, or food items should ever be stacked, piled or displayed in a way that compromises presentation. Customer Experience & Connection Lead the bar with warmth, professionalism, and hospitality, fostering genuine connections with customers. Resolve guest concerns immediately and communicate key feedback or issues to the Area Manager. Uphold a calm, intentional tone that reflects The Boy & The Bear's refined service culture. Create coffee-driven conversations with both staff and customers to enhance engagement and education through: Talking about New coffee offerings and tasting notes Conducts Espresso and pour-over sampling New product launches and seasonal features sampling Coffee class or event promotions when customers are interested. Team Culture & Leadership Motivate and guide the team during each shift; lead by example in tone, professionalism, and consistency. Listen to team concerns, feedback, and ideas that can enhance the customer experience, staff well-being, and overall operations. Ensure all staff maintain excellent personal presentation and grooming, fully aligned with TB&TB's dress code and professional standards. Address performance or behavior concerns early and communicate them promptly to the Area Manager. Maintain a supportive, respectful, and compliant work environment where every team member feels valued and aligned with TB&TB's culture. Uphold company values and discourage unproductive behavior or negative communication, consistently redirecting focus toward teamwork, respect, and coffee excellence. While this role provides on-shift guidance, coaching, and performance feedback, the Café Manager does not function as management for purposes of tip pooling under California Labor Code §351.Working Conditions:
Close proximity to coworkers and customers. Exposure to hot liquid and steam. Lifting and carrying food and drink trays. Standing for long periods of time. Working with brewing and grinding equipment.Schedule Expectations:
Works a minimum of five shifts per week across Monday-Sunday, including weekends, and cycles through all shifts to ensure firsthand understanding of business operations across all hours.
