Full Job Description Summary:
The Research & Development Assistant II directly supports the R D department function under general supervision in specialized processed food development. This role works cross functionally in new product development, maintaining approved products and performing practical and lab work, product analysis.
Responsibilities:
Research ways to control cost. Prepares specification sheets for new product. Reformulates exiting product, prepares specifications sheets. Responsible for new product specifications sheets. Attends and confirms first time production to confirm quality and procedures. Works with plant staff to make improvements in same when needed. Responsible for labelling information of all new and existing product to include receiving, organizing, maintaining and updating design and printed confirmation either directly or through staff. Responsible for ingredients suppliers, confirming, and communication with supplier including allergen issues. Handles this directly or through staff. Reaches out to other departments for their cooperation and collaboration on projects.documents,laboratories.for all aspects of the product (flavor, color and texture, nutritional content etc.) areguaranteed throughout the shelf life of the products. Basic (May perform some or all of these duties as needed) Prepares/mixes soups in lab scale. Supports test of noodle production and analyzes noodle for pH, sodium, moisture etc. Performs desk work such as creating tables, data entry, copying/scanning taking and making phone calls to/from outside vendors. Orders and inventories ingredients, flavors, materials, office supplies and store appropriately. Samples product. (noodle, soup broth, garnish etc.) Makes/prepares/organizes samples. Assists with cooking and washing up afterwards (cookware, dishes etc.). Manages, sends/receives goods from/to other plant, suppliers and outside Designs products and executes experiments to ensure stability and success criteria Identifies and implements creative and practical applications and modifications of ingredients, formulas. Creates and maintains written specifications for all new formulas, ingredients and materials. Validates shelf-life parameters are met. Studies and analyzes other companies' products. Summarizes and reports project which concerned with to supervisor timely. Reads, understands, keeps current on relevant. R D Assistant II, rev 08112021 Page 2 Understands food regulations and shares this information. Inspects and confirms print designs. May develop products based on self-initiative.
Qualification and Requirements:
Has strong passion for food, restaurant and food industry. Culinary background desirable. Able to speak, read and write English very well. Able to perform sensory evaluation and consume products that contain meat,poultry,levels and externally. fish, and all major allergens and protein sources. (dairy, soy, wheat, corn, peanut) Able to read and understand government regulations regarding us product/industry. Able to communicate effectively by oral and written means at all organizational Solid knowledge of Microsoft Excel, Word and Outlook. Excellent interpersonal skills. Significant experience in food science, quality assurance or other related work.
Education:
High School diploma required. Bachelor's degree in related field desirable
