Job Description
Smokehouse Operator & Processing Lead Summary The Smokehouse & Processing Lead is a hands-on leadership role responsible for operating smokehouses (main priority) while supporting and guiding daily raw production activities. This position works closely with the Production Manager to ensure efficient workflow, proper product handling, and timely preparation of products for cooking. This role requires a team-oriented individual who leads from the floor, supports multiple production areas, and helps maintain equipment and sanitation standards. Flexibility, leadership, and mechanical aptitude are essential for success in this position.
Key Responsibilities:
Smokehouse Operations (main priority) Operate, monitor, and maintain smokehouses according to production schedules Monitor cooking, humidity, and cooling processes to ensure product quality and food safety Maintain accurate cooking and cooling records Ensure proper product flow from raw production through cooking and cooling. Production Leadership & Support Work closely with the Production Manager to coordinate daily production Support raw production activities including grinding, mixing, stuffing, patty forming, and slicing Help ensure employees are working efficiently and following proper procedures Leads by example by working alongside team members on the production floor Assist in training and developing employees across multiple areas. Sanitation & Food Safety Lead and participate in daily and weekly sanitation activities Ensure smokehouses and raw equipment are cleaned and maintained properly Follow and support all GMP, HACCP, and food safety programs Perform Pre-Operational Inspections Equipment & Maintenance Support Perform basic troubleshooting and minor equipment repairs Assist with preventative maintenance tasks Identify and communicate equipment issues proactively Qualifications High school diploma or GED required Experience in food production or meat processing preferred Mechanically inclined with the ability to troubleshoot equipment Strong leadership and communication skills Ability to work independently and as part of a team Strong attention to detail and organization Willingness to learn and take on multiple responsibilities Physical Requirements Ability to push carts up to 300 lbs Ability to lift up to 60 lbs Ability to stand for long periods and perform physical tasks • Ability to stand for long periods of time, bend, move, squat, push, pull, and twist Schedule & Work Environment Full-time position (40-50 hours per week) Work performed in raw and processing areas with varying temperatures Schedule may vary based on production and smokehouse needsBenefits:
