Job Description
Sous Chef Direct Report:
This position reports directly to the Chef and owners and is part of the management team.Position:
Year-round. 35-40 hours per week, Must have flexible availability including mornings, evenings and weekends.Pay:
Range:
$20-22/hour, based on experience, plus 25% BOH tip pool while in the kitchen. Office hours will not be included in the tip pool.Benefits :
40 hours PTO - (After 1 Year) Free meals and beverages Employee discounts Company parties and celebrations Local trades & partnership discounts Special event catering & rental discount Bulk Beer discount Manager Discounts Overview Responsibilities include supporting the Chef to oversee all BOH operations and ensuring food quality, safety compliance and profitability with a focus on training, staffing support, and mitigating challenges in real-time with a smile! This individual must have a positive and kind approach to working in a team environment. They must have strong communication and interpersonal skills to manage a team effectively in tandem with the Chef and serve as lead in the kitchen in their absence. Must be able to operate and lead the line, motivate kitchen personnel and ensure all kitchen operations run smoothly. A deep understanding of food safety regulations. Computer skills for scheduling, inventory software and ordering. This individual must promote, work, and act in a manner consistent with the mission and values of Matchwood Brewing Company. Kitchen Management Lead the Line when necessary Supervise or coordinate activities of cooks or workers engaged in food preparation to ensure pars are met. Oversees cleaning schedules and ensures regular task delegation. Leads and Supports the BOH team on deep cleaning tasks Supports Chef on catering prep and execution of on and off-site service as needed Provides feedback on menu performance and changes BOH Staff Training & On-Going Skill Development Must be a kind leader who is easy to approach, ask questions, and learn from. Lead on all training, planning, shifts and supports chef in developing BOH materials including menu and recipe development, pars/inventory, waste logs, checklists, etc. Ensuring all employees meet the standards of their individual job descriptions and personnel policies. Brings opportunities to elevate dedicated employees to new roles and skillsets to continue to build the bench of dedicated staff. BOH Staff Management Support Real-time staffing adjustments based on availability changes, callouts, or increase/decreases in business Oversight and real-time feedback ensuring food is prepared, portioned, plated and cooked consistently to recipe standards. Enforces proper sanitation, health and food safety at all times. Implements Matchwood Brewing standard of conduct and all employee policies. Leads on conflict-resolution and problem solving with Chef and other managers as needed and documents issues using internal protocols as requested by the Management team and owners. Ensure BOH team's timecards are accurate. Reviews schedule with Chef to ensure proper staffing to cover business demand within target labor budgets. Ensure all BOH team members use proper channels, apps and tools to input scheduling requests and/or changes in availability. Conducts interviews for entry level BOH positions at the request of the Chef. Responsible for onboarding and training all new and current BOH staff Ordering & Inventory Support Support the Chef in placing orders as needed. Leads receiving and ensures proper storage, FiFO, labeling and inspection of goods for damage, mistakes, or errors. Leads inventory management and pars oversight in support of the Chef Make suggestions on portion, ingredient or recipe changes to prioritize the bottom line. Builds, reviews, approves and delegates prep lists and tasks with support of the team. Supports Chef to ensure Matchwood maintains food safety and minimizes waste. Ideal Candidate Requirements 3-5 years previous experience as a lead cook, chef or supervisory role required with solid understanding of cooking equipment and techniques. Idaho Food Safety (minimum requirement) + ServeSafe certificate (ideal) Must have reliable transportation for work. Must be able to travel to off-site work locations for catering or special events. Must be able work a flexible schedule, including evenings, weekends, and holidays. Must be able to perform simple grasping, fine manipulation, and repetitive hand and arm movements frequently. Must be able to bend, squat, crawl, kneel, push, pull, and walk on uneven surfaces on an occasional basis and wear Personal Protective Equipment (earplugs, gloves, boots) when required. Must be able to walk outside in a variety of weather conditions (rain, wind, snow, heat). Must be able to work in hot, cold, and wet environments. Must be able to climb stairs both inside and outside. Position requires standing for long periods of time (up to 12 hours), bending, stooping, twisting, and lifting products and materials weighing over 50lbs. Routine pushing, pulling, reaching, upper body and arm rotation, arm extension, and lifting. Can sustain high noise levels and exposure to various temperature changes.Pay:
