Job Description

Primary Purpose of the JobResponsible for front and back of house areas, such as lodge kitchen, outside cooking areas, flagstone, Ranch acreage, Buckle Barn, Blue canteen, as well as the offices. Plan, organize, direct, and coordinate the kitchen staff and operating expenses for the efficient, well-prepared, and profitable kitchen. Key Responsibilities include the daily operations, such as opening and breakdown of the kitchen, hiring and training of kitchen staff, scheduling and managing payroll, ensuring high product levels to achieve and maintain guest satisfaction, meeting revenue and departmental profit goals. Directs kitchen staff in daily operations and in accordance with Ranch standards.

The employee exhibits a professional manner in dealing with others and works to maintain constructive working relationshipsDuties and ResponsibilitiesAchieves restaurant operational objectives by contributing information and recommendations to strategic plans and reviews; preparing and completing action plans; implementing production, productivity, quality, and customer-service standards; resolving problems; completing audits; identifying trends; determining system improvements; implementing change.

Maintains safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; complying with legal regulations.

Directs the preparation, seasoning and cooking of all food served on the Ranch.

Plan, order supplies, keeping records and accounts.

Coordinates preparation of all food served on the Ranch for guests and functions.

Collaborates with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of members and guests.

Checks the quality of raw and cooked food products to ensure that standards are met.

Inspects supplies, equipment and work areas to ensure conformance to established standards.

Follows sanitation practices, standards and regulations.

Review the restaurant reservation book. Check for VIPs and special requests. Ensure that proper staff is informed.

Foster and promote a cooperative working climate, maximizing productivity and employee morale.

Updates job knowledge by participating in educational opportunities; reading professional publications; maintaining personal networks; participating in professional organizations.

Ability to work a flexible schedule, including nights, weekends and holidays.

Education/Experience1. High School graduate or equivalent.2. 2-3 years of full-service Sous Chef/Lead Line experience3. Skilled in confident, hands on supervision of culinary production4.
Basic office computer skills:
Word. Excel, PowerPoint.5. Customer service awareness; experience in front of guests, action stations, or conversing tableside.6. Ability to lead by example with mutual respect7. Excellent culinary skills and a developed palate8. Valid driver s license.
