The Chief Cook is responsible for leading catering services at offshore or remote site facilities, ensuring high standards of food service, hygiene, health and safety, and client satisfaction. This role combines operational leadership, financial control, and team development within Conntrak Catering's global operational framework.Main accountabilities:
Health, Safety, Environmental and Food Safety- To ensure their own health and safety and that of others is given priority by: o Demonstrating total commitment to Conntrak safety and management systems and plans, client policies and safety systems and statutory requirements o A proactive approach to safety o Practising the highest personal standards o Encourages employee involvement in site safety systems and Conntrak Safe Operating procedures o Delivers Conntrak Safe Operating Procedures as per the agreed review schedule o Delivers Conntrak staff safety meetings • Promote a proactive safety culture by demonstrating leadership in HSE practices • Ensure compliance with all applicable local occupational health and safety laws, regulations, and company policies • Where operations fall under the Maritime Labour Convention (MLC 2006), ensure all welfare, food, accommodation, and rest-hour standards are met • Active participation on STOP/Observation cards onboard • Conduct safety meetings and toolbox talks with catering personnel • Timely and active participation in investigations of incidents, near misses, or food safety issues and implement corrective actions • Ensure all staff are trained and equipped with the correct PPE and follow safe systems of work Service Delivery and Operations • Oversee all aspects of food production, service delivery, and accommodation maintenance • Manage daily operations in compliance with Conntrak Catering standards and client requirements detailed in the Scope of Service • Ensure all kitchen, dining, and living areas meet company and client hygiene, sanitation, and housekeeping standards • Plan menus, supervise food preparation, and maintain cost-effective inventory control • Oversee procurement, storage and stock rotation of all consumables People • Responsible for leading, supporting, and developing offshore catering personnel to ensure continuous service delivery, high performance, and compliance with all health, safety, and hygiene standards • Supervise, coach, and develop catering and housekeeping staff • Implement and carry out inductions for all new staff and training of personnel in all aspects of safety, hygiene and on the job training.
- Conduct performance reviews and identify training and development needs
- Oversee scheduling, rotations, and leave planning in coordinator with Operations and Crewing
- Support Operations and HR with fair and consistent handling of disciplinary and grievance matters in accordance with company policy and local law Client Relations
- Serve as the main point of contact for the client on-site
- Ensure service delivery meets or exceeds contractual and quality expectations
- Encourage continuous improvement through client feedback and innovation initiatives
- Manage a clean, safe, and pleasant environment that promotes client satisfaction
- Maintain a clear understanding that the reporting lines of communication remain with Conntrack, while cooperating respectfully with Client representatives Machinery / Equipment / Materials / Consumables
- Ensure correct use, safe operations and keeping clean and hygienic. Basic maintenance and preparation for use
- Knowledge and competency in the safe use, handling, and storage of cleaning materials and chemicals in accordance with company, client, and local regulatory requirements. Ensure all hazardous substances are correctly labelled, stored, and used as per approved safety procedures
- All inventory, including food items and onboard supplies, must be managed strictly in accordance with company procedures. Employees are not permitted to claim or use any stock or provisions for personal purposes
- Maintain a working knowledge of the Company and Client Safety Management Systems o Compliance with all applicable safe systems of work and chemical safety regulations o Technically train team members in the correct and safe use, maintenance, and care of machinery and equipment o Ensure compliance with approved stock-rotation procedures o Manage and maintain working knowledge of: ?
- Active participation in on-board meetings and supporting the Company and functioning of Integrated Management System includes commitment to consultation and participation for continual improvement
- Adhere to the Company IMS procedures and policies, and commitment to eliminate any hazards and risks at workplace
- Maintain the Conntrak ways of working standards through the Company's IMS
- Nurture a positive working environment in line with Conntrak cultural behaviours
- Promote the company image. Communicate efficiently and effectively to clients and colleagues
- Perform any other tasks within his/her competence as required by Management Performance Measures

- Reporting faults to Operations Team o Ensure, by demonstrating, complete understanding of level of service provided that all catering services are delivered to the required standard including: Encouraging feedback from all customers o Suggesting improvements where possible o Participate in remedial action or improvement opportunities Qualifications (professional, technical, academic):
Essential:
- Previous managerial / supervisory experience working onboard a vessel, rig and/or barge
- Hold country and client required certification including valid offshore safety and medical certificates at all times (e.g. STCW, Ships Cook CoC, BOSIET, T-BOSIET, OEUK Medical, AMSA Medical, etc)
- Must maintain fitness for work and compliance with all site-specific health and safety requirements and in accordance with relevant offshore, MLC 2006 and applicable flag-state medical requirements
- Hold valid travel documents with at least 6-month validity (e.g. passport and seaman book)
- Intermediate written and verbal English Typical background and experience required:
Essential:
- Previous experience using various cooking styles, including international and any other country, company and client requirements (e.g. Continental, Arabic, Indian, Thai, etc)
- Strong leadership skills with ability to manage teams remotely
- Ability to manage multicultural teams and maintain service quality
- Good communicator and act as the main communicator between office management and staff onboard
- Ability to demonstrate dedication and strong work ethic
- Builds trust and respect of others
