Job Description

JOB TITLE
Production and Kitchen Manager STATUS:
Part‑Time/Weekends required Position Summary The Production and Kitchen Manager oversees all daily food production operations at Red Apple Farm, including apple cider donuts, dumplings, pies, cookies, nuts, fudge, and other farm‑made goods. This role also manages the Ice Cream Window and its staff, ensuring consistent quality, efficiency, and exceptional guest service. The Production and Kitchen Manager leads a multi‑department team, maintains high standards of food safety and cleanliness, and ensures smooth coordination between the kitchen, bakery, retail store, and seasonal operations. The role also oversees production operations for all three retail locations — Phillipston, Wachusett Mountain, and Boston Public Market — with a focus on quality ingredients, sustainable practices, and efficient production systems.
KEY RESPONSIBILITIES
Food Production & Quality Control Oversee daily production of donuts, dumplings, pies, cookies, nuts, fudge, and other farm‑made items and maintaining all recipes and recipe standards Maintain consistent product quality, portioning, presentation, and freshness. Develop and refine production schedules to meet retail demand, seasonal volume, and special events. Ensure all recipes, batch logs, and production standards are followed accurately. Monitor inventory of ingredients, packaging, and supplies; coordinate timely ordering and restocking. Manage cost control, quality control, and waste reduction. Maintain food safety protocols, labeling, sanitation standards, and compliance with local health regulations. Review production budget, track sales, and manage expenses to ensure profitability. Report financial performance to the Accounting Manager. Track inventory and submit inventory sheets and orders to the Procurement Manager. Handle wholesale production needs. Maintain sanitation, recycling, and overall efficiency of production areas. Manage kitchen equipment - equipment maintenance and inspections and calibration of scales Ice Cream Window Operations Manage staffing, training, scheduling, and service flow. Ensure consistent portioning, product quality, and guest experience. Oversee cleanliness, sanitation, and equipment maintenance. Implement efficient systems for high‑volume and seasonal peak periods. Safety, Sanitation & Compliance Maintain strict adherence to food safety regulations, allergen protocols, and sanitation standards. Conduct regular cleaning checks, equipment inspections, and safety audits. Ensure proper documentation of temperature logs, production records, and compliance forms. Responsible for licence renewals Team Leadership & Staff Management Recruit, train, schedule, and supervise production and ice cream staff. Provide ongoing coaching, performance feedback, and cross‑training opportunities. Foster a positive, inclusive, and professional work environment aligned with Red Apple Farm values. Ensure staff compliance with food safety, ServSafe standards, and farm policies. Retail Operations Support Assist in training and supporting retail staff to ensure excellent customer service. Coordinate with the Procurement Manager on inventory and product needs. Support seasonal transitions in store displays and offerings. Event & Festival Coordination Collaborate on planning and executing seasonal festivals, on‑farm events, and approved off‑site events. Ensure consistent product quality and guest satisfaction during peak times. Work with the Festival/Events Team to align product offerings with sales objectives. Administrative & Reporting Track production metrics, waste, labor usage, and inventory levels. Assist with budgeting, forecasting, and cost control for production operations. Participate in Bi-weekly Team Meeting (every other Wednesday 1230-2:00pm - in person) Participate in Bi-weekly SLT meeting (remote - every other Wednesday 930-11:00am) Weekly check-in with Manager Presence at Wachusett Mountain and Boston locations as needed. Weekly meetings with Key Production Staff for all locations (and as needed) Bi-Weekly meetings with Production and Operations Teams (and as needed) -every other Wednesday before
Team Meeting Qualifications Experience:
Minimum of 3 years of experience in food services managment in a high paced environment
Education:
Bachelor's degree in Food Services or Hospitality Management or a related field preferred.
Skills:
Strong organizational, leadership, and communication skills. Proficiency in food services management in a high paced environment
Knowledge:
Familiarity with food services, quality control, safety, sanitations and compliance in a kitchen environment

Pay:
$23.00 - $28.00 per hour Expected hours: 25.0 - 35.0 per week
