As a baker at our shop you will be shown how to properly read a scale and measure wet and dry ingredients for cookies. Prepped ingredients will be properly labeled, date and stored until time of use. After prepping you will then begin to make the doughs and mix the ingredients in our large mixer. Each cookie has different methods of when to add ingredients. It is important to properly follow all procedures and follow health department regulations when it comes to cross contamination. After doughs are made you will either label, date, and portion the dough to be used at a later time, or you will start prepping to bake cookies off in the oven. You will be shown the proper way to measure and prep our cookies, how to follow safe procedures when operating the oven, and how to properly rotate and bake them. Following first in first out, we will label and date the baked cookies to ensure proper regulations for rotating product.
