Job Description

Bring your Pastry Skills to Alaska. Alaska Backcountry Guides is seeking an exceptionally talented pastry student or recent graduate for a three month paid placement in a spectacular Alaska setting. This is an opportunity to showcase your creativity, hone your skills under our executive chef and supportive team guidance; serving guests from around the world in a boutique operation. Our Patissier position is small in volume and ambitious in quality. For 20 or fewer guests each day, you'll prepare exceptional breakfast pastries, delicious afternoon cookies, and a memorable dessert for nightly dinner service. We're especially interested in beautifully flaky croissants, delicate macarons, and a few outstanding signature items that reflect your individual talents. Extraordinary flavor, precise technique, and thoughtful presentation matter; a carefully chosen selection made exceptionally well. You'll have opportunities to: Bring your signature pastries and desserts to our menu. Refine your skills through daily production and feedback from our executive chef and supportive fun team. Contribute creative ideas to an intimate, personalized dining experience. Photograph your creations and build your professional portfolio. Spend three months surrounded by Alaska's extraordinary mountain beauty, working with team dedicated to our guests. Who we're looking for You may still be in pastry school, but you should already have strong technical skills, confidence, and examples of excellent work. This placement is suited to someone ready to take responsibility for a small pastry program while continuing to learn and grow. We're looking for: Excellent baking and pastry fundamentals, particularly in laminated doughs and dessert preparation. A few signature specialties you can execute beautifully and consistently. Strong organization, time management, and attention to detail. The ability to plan production and maintain a clean, efficient workspace. A collaborative attitude and openness to guidance and feedback. Enthusiasm for spending a full season in amazing Alaska. You will lead daily pastry production under our executive chef and team supervision. An advanced student or recent graduate with practical kitchen experience will be the strongest fit.
