Full-time, hands-on supervisory role Reports to: General Manager and Executive Kitchen Manager Position Summary Hot Italian is looking for an experienced Kitchen & Pizzaiolo Supervisor to lead daily kitchen operations at our San Rafael location. This is a hands-on position. The supervisor will work alongside the team, prepare and bake pizzas, manage service, maintain product quality, organize kitchen production, and ensure that every employee follows recipes, food-safety procedures, and company standards. The ideal candidate is a strong pizzaiolo who can also lead people, remain organized during busy service, solve problems, and hold the kitchen team accountable. Primary ResponsibilitiesPizza Production and Quality Stretch, top, bake, and finish pizzas according to Hot Italian recipes and standards. Properly manage dough, including thawing, tempering, proofing, handling, and daily pars. Operate and maintain the pizza oven safely and consistently. Inspect all pizzas before they leave the kitchen. Maintain consistent portion sizes, presentation, baking, and ingredient quality. Identify and correct problems with dough, oven temperature, preparation, or execution. Train kitchen employees on pizza preparation and proper oven operation. Kitchen Supervision Lead the kitchen team during preparation and service. Assign stations, side work, prep duties, and cleaning responsibilities. Confirm that employees are ready and in position before service begins. Coordinate the pizza, pantry, pasta, prep, and dishwashing stations. Maintain clear communication between the kitchen and front-of-house team. Monitor ticket times and reorganize the line when necessary. Step into any kitchen station when support is needed. Ensure opening, shift-change, and closing checklists are completed correctly. Report staffing, performance, equipment, or operational problems to management. Team Leadership and Training Create a professional, respectful, and organized kitchen environment. Train new employees on recipes, portions, equipment, food safety, and kitchen procedures. Give clear instructions and correct mistakes immediately and professionally. Monitor attendance, punctuality, uniforms, productivity, and employee conduct. Document repeated performance or policy issues and report them to management. Conduct pre-shift meetings when needed. Help develop employees so they can work independently and cover multiple stations. Preparation and Inventory Review reservations, expected sales, events, and previous sales to establish daily preparation levels. Prepare and communicate accurate production and prep lists. Check inventory and communicate ordering needs before products run out. Receive deliveries and verify product quantity, quality, temperature, and condition. Ensure all food is properly labeled, dated, rotated, and stored using FIFO procedures. Prevent shortages, overproduction, waste, spoilage, and unauthorized portions. Participate in regular inventory counts. Communicate with the central production facility regarding dough, sauces, prepared products, and delivery needs. Cost and Waste Control Follow approved recipes and portion standards. Monitor food waste, remakes, complimentary items, and employee meals. Record waste and investigate unusual losses. Use staff efficiently according to business volume. Notify management when labor hours should be adjusted because of slower or busier business. Help management improve food cost, productivity, and kitchen organization. Food Safety and Sanitation Enforce all company food-safety and sanitation procedures. Follow California food-handling requirements and Marin County health regulations. Monitor refrigeration, freezer, holding, and cooking temperatures. Ensure temperature logs and cleaning checklists are completed accurately. Prevent cross-contamination and maintain proper allergen procedures. Keep the kitchen, walk-in, storage areas, equipment, and employee workstations clean and organized. Immediately report equipment failures, pest concerns, safety hazards, and maintenance problems. Help keep the restaurant prepared for health inspections at all times. Required Qualifications Professional pizza-making experience. Previous kitchen-lead, shift-lead, or supervisory experience. Strong understanding of dough handling and pizza-oven operation. Ability to manage a fast-paced kitchen service. Knowledge of food safety, sanitation, labeling, storage, and FIFO procedures. Ability to train, direct, and hold employees accountable. Strong organization, communication, and problem-solving skills. Availability to work evenings, weekends, holidays, and changing schedules. Valid California Food Handler Card; manager-level food-safety certification is preferred. English required for kitchen communication and documentation; Spanish or Italian is helpful. Physical Requirements Ability to stand and work for extended periods. Ability to work around hot ovens, refrigeration, kitchen equipment, and wet surfaces. Ability to lift and carry up to 50 pounds safely. Ability to bend, reach, move quickly, and perform repetitive kitchen tasks. Important:
This is not an office-only management position. The Kitchen & Pizzaiolo Supervisor is expected to work actively on the kitchen line while directing and supporting the team.
