Resteraunt opens in Orland Park this November. Two Sous Chef roles, reporting to the Executive Chef. What you'll do: run the line on your shifts, expedite, manage prep and par levels, receive and inspect fish deliveries, hold food safety and sanitation standards, train and develop line cooks, and cover the kitchen when the Exec is off. You cook every shift — this is not a clipboard job. What we're looking for: three or more years on a professional line with at least one in a lead or sous role. Solid knife skills and real comfort breaking down whole fish, or the appetite to get there fast. You can run a Saturday night rush and still be someone people want to work next to. Grill and fry station strength matters most here.
