Through our meal programs, culinary training, workforce development, and contract food service operations, we nourish, empower, and employ individuals throughout South Jersey. Our 1506 Contract Kitchen operates 365 days a year and produces approximately 2,000 nutritious meals daily for community partners and residential programs. We are seeking an experienced, mission-driven Sous Chef to join our Culinary Operations team and help lead daily production while maintaining the highest standards of quality, safety, and efficiency. The Sous Chef is a hands-on leader responsible for supervising daily kitchen operations, supporting staff development, ensuring food safety compliance, and producing high-quality meals in a fast-paced production environment. This position works closely with the Senior Sous Chef, Executive Chef, and Director of Culinary Operations to ensure operational excellence while supporting Cathedral Kitchen's mission. Position Responsibilities
- Assist in supervising the daily production of approximately 2,000 meals for Cathedral Kitchen's contract meal programs.
- Lead daily food preparation, cooking, packaging, and service while maintaining consistency, quality, and presentation standards.
- Coordinate production schedules to ensure all meals are prepared, packaged, and delivered on time.
- Supervise and work alongside cooks, prep cooks, dishwashers, porters, and volunteers during daily operations.
- Ensure recipes, production sheets, portion sizes, and nutritional standards are followed consistently.
- Create and distribute daily production sheets and assign work responsibilities to kitchen staff.
- Assist with menu execution and operational improvements.
- Monitor food quality throughout preparation, packaging, and delivery.
- Receive deliveries, inspect products, rotate inventory using FIFO, and maintain inventory records.
- Assist with food ordering and communicate inventory needs.
- Incorporate and document donated food products.
- Assist with monthly inventories.
- Maintain sanitation standards in accordance with ServSafe and health regulations.
- Maintain cleanliness and organization of production, storage, and loading areas.
- Train, coach, and mentor kitchen staff.
- Provide daily supervision and performance feedback.
- Support cross-training initiatives.
- Assist with Culinary Arts Training Program students.
- Support catering production and special events.
- Maintain production records, temperature logs, and sanitation logs.
- Identify efficiencies, reduce food waste, and maintain food cost objectives.
- Serve as acting kitchen leader in the absence of the Senior Sous Chef.
- Perform other duties as assigned. Qualifications
- Minimum four (4) years of culinary experience in a high-volume production kitchen.
- Previous supervisory experience preferred.
- ServSafe Manager Certification required or obtainable within six months.
- Valid driver's license required.
- Knowledge of food safety, sanitation, inventory control, and large-scale food production.
- Strong leadership, communication, and organizational skills.
- Ability to lift up to 50 pounds and stand for extended periods.
- Flexible schedule including weekends and holidays as needed.
