The primary responsibility of the First Cook is to assist the Head Cook with kitchen operations including planning and directing food preparation, cooking activities, controlling inventory, food and labor costs, and ensuring staff are following all safety rules/procedures. The First Cook works under the direction of the Head Cook in performs in accordance with K3 mission, values and performance standards while providing best-in-class service to all clients and guests.
REQUIRED QUALIFICATIONS
Three years of cooking/baking experience in high volume production, portion control, plating/garnishing, and time/space management.
Knowledge of HACCP and ServSafe guidelines - training in sanitation, personal hygiene, safety and prevention of food borne illnesses.
Culinary knowledge and knife skills.
Current ServSafe Manager Certification
Able to proficiently speak, read, understand, and write English
Must pass a pre-employment background screening with satisfactory results.
Must pass a pre-employment drug screening with satisfactory results obtained.
Completion of a post-offer pre-placement functional test, to verify test recipient has the capability to perform essential job functions.
DESIRED QUALIFICATIONS
Degree in Culinary Arts or certification from an accredited culinary institute.
Computer Literacy
Proficient in Microsoft Office (Word, Excel, etc.)
High school diploma or equivalent
Previous remote site camp experience and/or related area
ESSENTIAL FUNCTIONS

Maintains good customer service relationships by courteous, daily contact and ensuring professional and quality service is being provided by all catering and housekeeping staff to clients.
Maintains compliance with client's contract standards.
Plans, cooks and oversees the preparation of meals ensuring that fresh, delicious food options are being served daily for each meal service line and salad bar.
Monitors inventory of food levels and conditions; maintains inventory of groceries and supplies by ordering items accurately, in a timely manner, examines the shipment, ensuring the quality and quantity meets established standards, and ensures the proper storage and rotation of groceries and supplies.
Produces menus based on type of food available, food to be prepared by applying culinary knowledge and experience in food preparation.
Estimates food consumption based upon current camp population and the planned menu.
Inspects and conducts pre-meal and periodic walkthroughs of the kitchen, ldish room, spike room, dining area, living quarters and other work assigned areas, to monitor that work is being conducted safely and that the cleanliness, sanitation and organization of work areas are maintained.
Ensure constant availability of HACCP and safety materials and equipment for camp staff and enforce their use.
Responsible for coordination of work in the absence of staff; this may include assuming the temporary catering and cleaning job assignments.
Helps assist with freight, including unloading and loading freight into designated areas.
Performs other duties assigned.
WORKING ENVIRONMENT
The employee will be required to live and work in a remote and confined workspace for extended periods of time and exposure to work assignments consisting of a rotational schedule. The length of a shift, and the length of the rotation period can vary. The ability to work day or night shifts are required. Much of the work is performed in a remote setting with a wide variety of people in differing functions, personalities and abilities. Must be able to travel in all means of air and ground transportation commonly used in remote work settings. Exposure to cleaning chemicals and solutions and must wear proper PPE. Employee is required to wear designated and appropriate uniform and must wear non-slip shoes during their shift.
PHYSICAL DEMANDS
The employee's work requires routine walking, standing, bending, stooping and twisting, kneeling, squatting and carrying items weighing up to 40 pounds for a distance of 10 feet. Lifting abilities up to 40 pounds. There is a lack of immediate access to critical medical services as well as urban community services. SAFETY Adhere to safety policies, practices and procedures. Maintains liaison with safety personnel on various safety policies, practices and procedures to assure information exchange, mutual assistance and an enhanced positive safety culture. Instructs, provides guidance and training to assigned staff regarding safety policies, practices and procedures, utilizing proactive methods. Enforce penalties for infractions of safety policies, practices and procedures. Actively participates in behavior and commitment based safety program and supports safety goals by planning, implementing, and coordinating policies, practices and procedures to reduce or eliminate occupational injuries, illnesses, deaths, and property damage. Coordinates safety activities of assigned staff and conducts multiple safety meetings to ensure daily operations are compliant with company and client safety requirements. Disseminates information to assigned staff, other housekeeping and departmental locations regarding workplace hazards and or other safety information. Monitors, records and provides documentation on safety related issues in the workplace. Identifies, appraises, resolves, and / or appropriately reports conditions which could produce injuries, illnesses, and property damage. May assist in investigation of accidents or incidents.
