Saltaire Yacht Club

Cook / Garde Manager

Job Description

Saltaire Yacht Club | Mid-Season Contract Role | Immediate Start
  • September 20, 2026 Saltaire Yacht Club is hiring an experienced Chef de Partie / Garde Manger Cook to join our team immediately for the remainder of the 2026 summer season.
This is a serious station-leadership position in a small, professional kitchen serving a private coastal membership community on Fire Island. This is not an entry-level job, and it is not a vacation role. We are looking for a cook who moves with urgency, plates with care, and thinks two tickets ahead.
  • About Saltaire Yacht Club
  • SYC is a private yacht club located in the village of Saltaire on Fire Island, NY — accessible only by ferry.
We operate a chef-driven dinner program with high seasonal volume, elevated standards, and an extremely tight team.

  • Position Overview
  • This role is full ownership of the Garde Manger Station — the first food our members see, and must be attractive and delicious. You will run a fast-paced, detail-heavy station responsible for:
  • Bread service and opening mise en place (daily priority)
  • Composed salads, cold appetizers, and refined small plates
  • Fried items and bar-driven starters
  • Flatbreads and select entrées utilizing the pizza oven
  • Charcuterie-style boards, garnishes, and seasonal presentation work
  • Master prep support including doughs, pasta, sauces, and occasional dessert prep This is a station that demands visual discipline, speed, organization, and constant communication.
  • Kitchen Reality — All Hands On Deck
  • This is a small team environment.
Everyone contributes beyond their station.
Daily expectations include:
  • Receiving and properly putting away deliveries
  • Maintaining cleanliness, labeling, organization, and station discipline
  • Supporting teamwide prep and service needs
  • Stepping into dish support when staffing requires it Professionalism, accountability, and urgency are required every day.
  • Schedule
  • This is a mid-season relocation contract with immediate start:
  • Start:
    Immediately (late July 2026)
  • Now•
Labor Day:
6 days/week, Mondays off
  • After Labor Day:
    Weekends only
  • Final paid day: September 20, 2026 Dinner service is 5:00 PM
  • 9:00 PM, with occasional extended service on peak nights and private events.
  • Compensation
  • $900
  • $1,300/week, based on experience Housing is provided as part of this relocation position.
  • Required Experience & Fit
  • This role is for a cook with real professional seasoning — not someone learning basics.
Preferred qualifications:
  • Minimum 5 years professional kitchen experience
  • Background in fine dining, upscale casual, or chef-driven restaurants strongly preferred
  • Culinary school training is a plus
  • Strong knife skills, organization, and composed plating ability
  • Ability to run a station solo during high-volume service
  • Comfort executing across cold prep, fryer work, and pizza oven pacing
  • Experience supporting private events or catering-style service is a plus This role is for someone who takes pride in the details — clean cuts, sharp plates, tight timing — and understands that garde manger is often the first and most lasting impression of the kitchen.
  • Fire Island Reality & Housing
  • This is a seasonal relocation contract on a car-free island.
  • Fire Island is accessible only by ferry
  • No cars are permitted, and mainland parking is extremely limited and extremely expensive
  • Staff housing is shared, with private bedrooms provided
  • Space is practical — bring only essentials
  • This is a focused, professional living environment (not a party house) Fire Island is paradise for visitors — our team is here to execute at a high level every night.
  • Hiring Process
  • We hire carefully because mid-season replacement is not realistic in an island environment. Given the immediate need, we're moving quickly, but the standard doesn't drop.
  • Resume required
  • References required
  • FaceTime interview
  • Commitment through September 20 expected
  • To Apply
  • Please email your resume and a brief note on your experience to: Lucnosredna@gmail.
