Job Description

In a high-volume kitchen like TAP21, a dishwasher is much more than someone who washes dishes. They are a critical part of keeping the kitchen running efficiently. A strong dishwasher helps the entire kitchen stay clean, organized, and compliant with health department standards. Here are the typical job duties: Primary Responsibilities Wash dishes, glassware, pots, pans, sheet trays, and utensils quickly and thoroughly. Operate the commercial dish machine properly. Kitchen Cleanliness Keep the dish area clean, organized, and free of clutter. Empty trash and recycling throughout the shift. Sweep and mop kitchen floors regularly. Clean floor mats. Keep drains clean and free of debris. Clean sinks, dish machine, and surrounding work area. Equipment Cleaning Wash grills, fryer baskets, inserts, and cooking equipment. Clean prep tables and shelving as directed. Assist with nightly cleaning of kitchen equipment. Delime and clean the dish machine according to schedule. Organize storage shelves. Rotate clean kitchen equipment. Closing Duties Empty all trash. Sweep and mop the kitchen. Clean the dish machine. Sanitize sinks and counters. Take cardboard to recycling. Leave the dish pit ready for the morning crew. Expectations in a High-Volume Kitchen A great dishwasher should: Work quickly without sacrificing cleanliness. Stay ahead of the kitchen's needs. Communicate with cooks when they're running low on pans or utensils. Keep a positive attitude under pressure. Be reliable and on time. Follow food safety and sanitation standards. Safely use chemicals and wear proper PPE. Physical Requirements Stand for long periods (8-10 hours). Frequently lift up to 50 lbs. Work in a hot, wet, fast-paced environment. Bend, reach, and carry heavy pots and racks. Performance Standards A dishwasher is successful when they: Keep dishes flowing so the kitchen never runs out of essentials. Maintain a clean and safe work area. Complete assigned cleaning tasks each shift. Support the kitchen team wherever needed. Arrive on time and ready to work. For TAP21, where you're serving prime rib, burgers, wings, fish, and handling busy beer service, I'd also include: Polish and organize beer glasses before service. Keep fry baskets, sauté pans, and sheet trays cycling continuously during rushes. Help restock the line with clean utensils and pans during peak hours. Assist with receiving and putting away deliveries when needed. Report any broken dishes, glassware, or equipment immediately. This creates a dishwasher position that contributes to the entire kitchen's success rather than simply "washing dishes."
