Executive Chef/Sous Chef Major Functions:

Ensures high levels of food quality, presentation and cost control according to food specifications.

Essential Functions:

1. Follows recipe cards and/or product specifications for preparing, seasoning, cooking, tasting, carving and serving soups, meats, vegetables, desserts and other food for consumption in an eating establishment. 2. Food preparation will include operating a variety of kitchen equipment to measure and mix ingredients, wash, peel, cut and shred fruits and vegetables, trimming and cutting meat, poultry and fish for use. Operates a variety of kitchen equipment i.e. choppers, mixing machines, slicers, steamers, grills, etc. 3. Controls food waste, loss and usage per PHG policies and procedures. (Assists in setting plans and actions to correct any food cost problems.) 4. Maintains standards of sanitation and cleanliness of kitchen, restaurant utensils, equipment, and the kitchen area. Practices "clean as you go" method, which requires that all equipment and all areas are kept in an orderly and sanitary condition at all times. 5. Checks pars for shift use, determines necessary preparation, freezer pull and line set up. Notes any out-of-stock items or possible shortages. 6. Cooks orders per guest ticket from server. Assists in the preparation, production and service of food for banquet and associate functions. 7. Assists in prep work of vegetables and condiments as required for the next shift. 8. Assists in storing food when any deliveries arrive. Dates and rotates all food containers as required. 9. At appropriate time, starts break down and cleaning of cook's line and any other necessary workstations. Completes breakdown at close of business. 10. Checks conditions of area and equipment and notifies manager of areas that need attention. 11. Able to move items weighing up to 50 pounds and is able to stock items on shelves above eye level and able to stand for 8 consecutive hours. 12. Has a thorough knowledge of emergency and life safety procedures, and follows all key control procedures. 13. Provides the highest quality of service to guests at all times and practices each item in the Guest Service Pledge. 14. Wears proper uniform and name tag at all times in accordance with the standards of personal appearance guidelines in the Columbia Sussex handbook. 15. Performs all other duties deemed necessary by management.
