Pre-opening, afternoon, evening, weekend, and holiday availability may be required About Gregs Cookout Gregs Cookout is a busy Haitian restaurant looking for a dependable, experienced kitchen professional who can take ownership of prep work and execute orders accurately during service. We need someone who works with urgency, follows recipes and portion standards, communicates shortages before items run out, maintains a clean station, and does not need constant supervision. Primary Responsibilities Complete assigned daily prep before the required deadline. Wash, cut, portion, season, label, date, and properly store ingredients. Prepare proteins, seafood, vegetables, rice, sauces, sides, and garnishes according to restaurant standards. Set up and fully stock the assigned station before service. Cook menu items accurately and follow ticket instructions and modifiers. Follow approved recipes, portions, plating standards, and food-safety procedures. Immediately communicate LOW items, shortages, delays, or equipment problems. Restock the line before products run out. Keep tickets moving during busy service and assist the slowest station when assigned. Maintain proper food temperatures and complete required temperature logs. Follow FIFO, labeling, cooling, reheating, sanitation, and cross-contamination procedures. Clean and reset the station throughout the shift. Complete closing duties, waste records, carryover labels, and next-shift handoff notes. Follow directions from the chef, BOH lead, or manager. Help maintain a respectful, organized, team-focused kitchen. Qualifications At least one year of prep cook, line cook, or high-volume kitchen experience preferred. Haitian or Caribbean cooking experience is strongly preferred. Strong knife skills and ability to follow recipes consistently. Able to work quickly without sacrificing food quality or safety. Reliable transportation and dependable attendance. Able to stand for long periods and perform the physical duties of a commercial kitchen, with or without reasonable accommodation. Comfortable working around heat, fryers, grills, knives, and commercial equipment. Must communicate clearly and accept coaching. Food-safety training or certification is preferred. English or Haitian Creole communication skills are helpful. What Success Looks Like Prep is completed correctly and on time. The station is stocked before service. Shortages are communicated before products run out. Orders are prepared accurately and without unnecessary delays. Portions, recipes, and presentation remain consistent. The station is clean, labeled, organized, and properly handed off. The employee can manage assigned responsibilities without the owner constantly stepping in. This Position Is Not a Good Fit If You Frequently arrive late or miss scheduled shifts. Wait to be told every routine task. Ignore prep lists, recipes, portions, labels, or sanitation rules. Leave your station without communicating. Hide shortages or wait until an item is completely out to report it. Refuse to clean, restock, close, or help the kitchen team.
