Tiny Croissanterie is a croissant and laminated pastry bakery in Sunnyvale. We are hiring a PM Production Lead to run our afternoon and evening production shift, so tomorrow's bake is mixed, laminated, shaped and ready to our standard. What you will do

• Run the PM production sheet every shift: mixing, lamination, sheeting, cutting, shaping, retarding, and pulling and racking tomorrow's numbers
• Lead lamination to the written spec: cut size, stretch, shaping and proof
• Plan sheeter time so mixing, lamination and scrap rolls do not overlap, and care for the sheeter
• Train the PM crew to the same written method the AM team uses, with a sign-off record by station
• Hand off to the AM Lead Baker every day with written notes: what is ready, what is short, what went wrong
• Count PM ingredients against the PAR sheet and keep the walk-in and freezer organized, labeled and dated
• Develop new and seasonal items directly with the owner What we need
• Five or more years in laminated dough production, two or more leading a shift
• You read a recipe in grams, hold a yield, and run a sheeter with confidence
• You train in short, clear steps with demonstration
• Full time, afternoon into evening, weekends as production requires. Overnight work is scheduled in advance.
• California Food Handler Card, or obtained within 30 days
• Able to lift up to 50 pounds, with or without a reasonable accommodation What we offer

• Reports to the Chef de Cuisine, with direct R&D work alongside the owner
