Job Description

Beaver Dam Farms is expanding its farm-to-table operation with a dedicated meat processing facility in Greenback, Tennessee. Situated in Loudon County in the East Tennessee foothills, the facility sits on a working farm property raising Black Angus cattle and Yorkshire/Hampshire hogs on pasture, with grass-fed, no-hormone, no-antibiotic practices at the core of the operation. The site includes an on-site USDA-inspected processing plant, allowing animals to be raised, processed, and prepared for market without ever leaving the farm — a true "stable to table" model. This is a unique opportunity to take on a management role in a thriving farm-to-table operation. Beaver Dam Farms is seeking an experienced and passionate Lead Butcher/Processor to join our team. As the Lead Butcher, you will be the driving force behind the butchering and processing of whole premium beef, chicken, pork, and turkey, working directly with animals sourced from our farm to ensure the highest quality cuts for our customers.
Key Responsibilities:
Oversee and manage all butchering operations, ensuring safe, humane, and efficient practices. Oversee and manage the whole circle starting at processing the whole animal to cutting, and packaging. Handle the butchering of beef, chicken, pork, and turkey from start to finish with primal cuts. Manage inventory and ensure the quality of meat products meets the highest standards. Lead and supervise a team of butchers, training and ensuring best practices are followed. Work closely with the farm's owners to help create and maintain our farm-to-table supply chain. Maintain a clean and safe working environment in compliance with health and safety regulations. Assist with customer orders and oversee packaging and delivery.
Ideal Candidate:
Strong experience in butchering and meat processing, with knowledge of various meat cuts and processing techniques across multiple species. Leadership experience, including managing a team in a butchery or similar setting. A passion for sustainable, high-quality, farm-to-table products. Exceptional attention to detail and a commitment to maintaining the highest standards of meat quality and hygiene. A self-starter who is comfortable working independently and overseeing daily operations.
