Meat Trimmer - Join the Opening Team at Terry Black's BBQ New Braunfels, TX! Terry Black's BBQ is bringing legendary Texas barbecue to New Braunfels, and we're looking for skilled and hardworking Meat Trimmers to join our opening team. This role is essential to delivering the premium-quality barbecue that has made Terry Black's a Texas favorite. As a Meat Trimmer, you'll play a critical role in preparing the meats that fuel our operation, ensuring every brisket, rib, and sausage meets our exacting standards before it ever reaches the pit.
What You'll Do:
Expertly trim a variety of meats by removing excess fat and connective tissue while maintaining proper shape, consistency, and yield for smoking. Prepare and season meats according to Terry Black's recipes and quality standards. Assist with sausage production, including grinding meats, preparing mixtures, and filling casings. Maintain the highest standards of food safety, sanitation, and cleanliness throughout all preparation processes. Work efficiently in a high-volume production environment while minimizing waste and maximizing quality. Collaborate with pit crews, kitchen staff, and management to ensure a steady supply of properly prepared meats. Support daily operations by completing additional duties as assigned by the management team.
What We're Looking For:
Strong knife skills and attention to detail in meat preparation and processing. Ability to work independently while maintaining productivity, accuracy, and consistency. Ability to safely lift, carry, and move up to 75 pounds throughout the course of a shift. Experience with meat processing equipment, including grinders and sausage stuffing equipment, is preferred. Commitment to quality, teamwork, food safety, and craftsmanship. Passion for barbecue and a desire to grow with one of Texas' most respected and fastest-growing restaurant brands.
