Food Service Manager

Job Description

The Food Service Manager is responsible for overseeing the day-to-day food service operations in a long-term care facility, ensuring high-quality meals that meet residents' nutritional needs while maintaining compliance with regulatory guidelines. Working under the direction of the Food Service Director, this position supervises daily kitchen operations, dietary staff, food production, meal service, sanitation, and inventory to ensure efficient and effective departmental operations.
Key Responsibilities:
Leadership & Management:
Supervise daily activities of cooks, dietary aides, and kitchen personnel. Prepare employee schedules and assign daily work responsibilities. Train, coach, and evaluate dietary staff. Ensure departmental policies and procedures established by the Food Service Director are followed. Promote teamwork and maintain a positive work environment.
Resident-Centered Care & Nutrition:
Work closely with the Registered Dietitian to ensure therapeutic diets and physician orders are followed. Ensure meals are prepared accurately and served according to resident care plans. Monitor food quality, portion control, and meal presentation. Address resident meal concerns promptly and professionally.
Regulatory Compliance & Safety:
Ensure compliance with CMS, DOH, HACCP, OSHA, and food safety regulations. Monitor sanitation practices, food temperatures, and cleaning schedules. Maintain required production records, temperature logs, and sanitation documentation. Assist during state surveys and regulatory inspections.
Operations & Budget Management:
Oversee daily food production and meal service. Monitor inventory levels and assist with ordering food and supplies. Minimize food waste and control daily food costs. Ensure kitchen equipment is properly cleaned and maintained. Report operational or equipment issues to the Food Service Director.
Quality Assurance & Continuous Improvement:
Monitor daily meal quality and service standards. Conduct routine kitchen inspections to ensure compliance. Assist with implementing quality improvement initiatives. Recommend operational improvements to enhance efficiency and resident satisfaction. Support the Food Service Director in achieving departmental goals and maintaining high-quality food service.
