POSITION SUMMARY
The Restaurant Manager monitors and supervises the daily operations of the dining areas, bar, and restaurants to ensure staff provide residents and guests with a pleasant dining experience. Works in conjunction with other department managers. Responsible for enforcing all policies including, but not limited to employee appearance, attendance and punctuality, service standards and completion of job duties. Responsible to hold /attend regular department meetings and to drive employee engagement and retention. This position requires the manager to be on the floor during meal periods
SPECIFIC DUTIES AND RESPONSIBILITIES
Directs service staff while coordinating with the production staff to ensure meal service periods and activities of service begin on time. Possesses a working knowledge of and enforces culinary services operational standards for service, safety, sanitation, production, and plating. Recruits, hires, trains, and schedules all service staff and supervisors ensuring budgeted guidelines for dollars and FTEs are met and within range for census. Enforces and abides by company guidelines for service. Liquor License & Compliance Oversee the day-to-day operation in accordance with all applicable Pennsylvania Liquor Control Board (PLCB) regulations and local requirements. Ensure all alcohol service, sales, storage, purchasing, and inventory practices comply with applicable Pennsylvania laws and company policies. Maintain required liquorlicense documentation, postings, permits, and records and ensure they remain current and readily available for inspection. Ensure all employees involved in the sale or service of alcohol receive appropriate training and follow responsible alcoholservice practices, including proper age verification and identification procedures. Monitor compliance with hours of alcohol service, responsible service requirements, and other applicable PLCB regulations. Maintain accurate alcohol inventory and records and promptly address discrepancies or compliance concerns. Immediately escalate any potential liquorlicense violation, citation, or regulatory issue to ownership/upper management and assist with corrective action as directed. Responsible for drafting opening, running, and closing side work duties specific to operations in each venue. Responsible for closing duties across the department ensuring equipment is in safe operating order. Completes opening and closing transaction reports when on duty. Balances cash drawers. Performs inventory of assigned products that may include paper, alcohol, or other supplies. Orders related product and maintains established par levels. Assigns and monitors all service area staff work assignments including Front of House Supervisors. Establishes professional rapport with residents and promotes a positive dining experience by making sure each point of contact between staff and residents and guests is professional and hospitable. Performs line up meetings prior to service, addressing and developing relevant topics. Responsible for creating programs and training material that reinforces company systems and processes for service and hospitality with FOH (Front of the House) staff. Directs supervisors and/or host in making table/station assignments to manage the flow of service across service staff and kitchen. Manages reservation system and processes. Coordinates all room service needs for residents, ensuring service is accurate and efficient. Develops and maintains knowledge of POS and reservation software, enforces compliance across staff. Runs a variety of POS reports and reviews with the director to address staffing needs based on volume, menu mix, and other factors. Addresses meal plan or billing issues for residents with Director. Coaches, disciplines, and reviews all service staff and supervisor performance regularly and annually. Documents and tracks PTO time in time and attendance system, monitors time punches. Assists Director with payroll. Coordinates with Environmental Services and Maintenance staff to ensure clean, functional and hazard free dining environments across the campus. Completes work orders or assigns such duties to others. Assist department leadership and director of resident activities in the coordinating, planning, and execution of all special events, themed meals and catered events across the campus that are food related. Creates menu layouts for daily meals and special events. Informs department Director of all activities in the dining areas relative to staff performance, supply needs and resident satisfaction. Maintains supply inventories for service items, paper, and lounge needs. Inspects restaurant dining areas for repair and maintenance needs and communicates needs appropriately and timely. May perform other duties as assigned.
Education Minimum:
High school education
Preferred:
College degree or hospitality certifications
Experience Minimum:
3+ years of progressive full-service restaurant, catering, hotel, or cruise line experience. Professional Membership, Licensures, Certifications RAMP Manager certified or the ability to obtain within 60 days
