Must follow compliance specifications outlined by customers, regulatory law, and guidelines. Report to Quality Assurance Manager, Assistant QA Manager, and Plant Manager. Performance Dimensions and Tasks Time Spent (%) 1. Communicate 30% Demonstrate and enforce proper compliance to employees to promote food safety and quality. Correct improper activity, practice, or behavior as it impacts customer compliance, regulatory law, and guidelines. 2. Test 30% Check product throughout the production phase to ensure food safety and quality. Measure weights of product before proofing accordingly to keep them within desired range. Take temperatures of product as it leaves the ovens to ensure specified temperature is met. Observe quality of product as it leaves the ovens. Remove product rejected by metal detectors and check wares. Test scales regularly to maintain accuracy in weights and measures. Conduct daily equipment and utensil inventory as instructed. 3. Document 30% Record all tests and weights using provided methods of documentation including computer software. Maintain documentation regularly throughout production day. Ensure accuracy to aid in compliance, audits, and general reference. 4. Sanitation 10% Clean work environment after production in preparation of the next day, including equipment and software. Ensure workplace meets Good Manufacturing Practices (GMPs). Check status and/or quality of sanitation. Conduct pre-operational sanitation as necessary.
