Run our food truck like it's your own — and get paid like it is. Mr. Shrimp Cajun Kitchen is hiring a full-time Food Truck Operator to take complete ownership of our mobile operation across Broward and Palm Beach County. This is not a shift-lead role. You'll run the truck end to end: the crew, the numbers, the schedule, and the standards.
Compensation:
$60,000-$90,000 per year — total earnings. That range is your base pay and your profit share combined, not a base salary with an unknown bonus stacked on top. Everyone starts with the same base. Where you finish inside that $60K-$90K range comes down to how well you run the truck — sales, food cost, labor cost, and waste. Run it tight and you land at the top of the range. Paid biweekly by direct deposit. Responsibilities Truck condition and daily operation Maintain the truck in good working condition — daily equipment checks, preventative maintenance, and keeping it road-ready and inspection-ready Load the truck every morning with product, prep, and supplies for the day's service Clean the truck every night after closing — full sanitation to health-code standard Cost and inventory control Track inventory: ordering, receiving, counts, and waste Control food cost against weekly targets Control payroll cost against weekly targets People Build and manage the staff schedule Hire and staff the truck Train and supervise your crew day to day What We Offer $60,000-$90,000/year total earnings — base pay plus profit share, combined Paid biweekly, direct deposit One week of paid vacation each year Air-conditioned truck — most trucks aren't, and you'll feel the difference in August Free meals every shift Real autonomy — you run it, we back you with the brand, the food, and the supply chain Growth opportunity as we expand across South Florida What We're Looking For 2+ years in restaurant management, kitchen management, or food service leadership Proven experience with inventory, scheduling, and cost control Valid Florida driver's license and clean driving record Comfortable driving and positioning a food truck ServSafe certification a plus (we'll help you get it if you don't have it) Available nights and weekends — that's where the volume is Self-motivated and dependable; you'll be operating independently Why This Role Exists We want an operator, not an employee.
