Position Summary Il Buco Commissary , the East Hampton bakery and newest member of the Il Buco Family, is growing our team. Rooted in the tradition of the beloved Il Buco Restaurant, our bakery focuses on artisanal techniques and high-quality ingredients. We are seeking a Commissary Operations Manager to oversee the business and operational performance of il Buco Commissary. Working in partnership with the Head Baker, this role is responsible for financial performance, logistics, facilities, staffing, account management, and strategic growth initiatives. The Head Baker is responsible for product quality, recipes, production methods, and the day-to-day execution of bread and pastry production. The Commissary Operations Manager is responsible for the business side of the commissary, ensuring the facility, people, systems, and processes are aligned to support sustainable growth and profitability. Together, the Commissary Operations Manager and Head Baker serve as the leadership team for il Buco Commissary. Responsibilities Business & Financial Management Own the financial performance of the commissary, including labor management, inventory controls, food costs, and profitability. Prepare budgets, forecasts, and KPI reporting and identify opportunities to improve efficiency and margins. Monitor production output and labor utilization in partnership with the Head Baker. Logistics & Distribution Manage delivery schedules and transportation partners. Ensure timely and accurate fulfillment to restaurants, retail locations, wholesale customers, and farmers markets. Develop systems and processes that support future growth and expanded distribution. Sales & Account Management Serve as the primary relationship manager for wholesale customers and strategic partners. Identify and pursue opportunities to expand wholesale and retail channels. Manage customer communications and ensure exceptional service and account retention. Facility & Administrative Operations Oversee inventory management, ordering, and vendor relationships. Manage equipment maintenance, facility repairs, and capital projects. Ensure compliance with food safety standards, sanitation requirements, labor laws, and company policies. Partner with Finance and HR on payroll, reporting, staffing, and operational initiatives. Team Leadership Hire, train, schedule, and manage commissary support staff and drivers. Partner with the Head Baker on labor planning and staffing needs. Foster a culture of accountability, hospitality, and continuous improvement. Qualifications 3-7 years of experience in food production, bakery and commissary operations, hospitality, or restaurant management. Strong financial acumen and experience managing labor, inventory, and cost controls. Experience managing logistics, vendor relationships, and operational systems. Excellent organizational, communication, and leadership skills. Ability to thrive in a fast-paced and evolving environment. Flexible availability, including weekends and holidays as business needs dictate. Physical Requirements Ability to lift up to 50 pounds. Ability to stand for extended periods and work in varying temperatures.
