The Extension Home and Community Department focuses on areas such as nutrition, financial well-being, mental health, and family relationships. As part of USU's land-grant mission, this internship offers hands-on experience assisting with research-based education and outreach designed to improve quality of life. Interns will help deliver programs, develop educational materials, and connect with community members in meaningful ways. Our team fosters a welcoming, supportive environment where collaboration, empathy, and growth are encouraged. Interns have opportunities to work both independently and as part of a team, with some flexibility in scheduling depending on program needs. This is an excellent opportunity for students interested in Extension, community education, public health, or family and consumer sciences careers. This position is telework eligible within the state of Utah, with in-person responsibilities in Cache County, UT. Responsibilities Program Operations & Evaluation Support statewide program operations, including inventory organization and distribution of materials Assist with survey scanning, data entry, and identification of key insights to support continuous quality improvement Gain experience with Extension reporting systems and program implementation processes Recipe Standardization & Resource Development Contribute to a statewide recipe standardization initiative by testing recipes, documenting results, and uploading content to shared platforms Help align and organize nutrition education resources available across Extension programs to improve consistency and accessibility Partnership & Event Coordination Assist in planning and execution of partner engagement events, including donor Lunch & Learns Support coordination of the Create Better Health Conference and Food Security Symposium (logistics, communication, and stakeholder engagement) Engage with community and industry partners to understand Extension's collaborative role Extension Integration & Grant Development Engage with multiple USU Extension programs to understand program areas, audiences, and funding opportunities Research and identify grants that support cross-program collaboration Assist in developing materials that increase the integration of Create Better Health across Extension Career Exploration & Professional Development Participate in exposure opportunities (meetings, events, program visits) to understand Extension career pathways Reflect on experiences to identify potential career interests within Extension Qualifications Minimum Qualifications Be an undergraduate student Have an interest in the Extension program Be dependable Have a continuous growth mindset Self-motivated Can keep tasks well organized Preferred Qualifications Have a current food handlers permit Required Documents Along with the online application, please attach: 1. Incumbents may be in both indoor and outdoor environments. Indoors, in an office space, event space, or public space are protected from weather conditions, but not necessarily from temperature changes. Incumbents may nearly continuously sit and often use repetitive hand motion (such as typing). Outdoors, incumbents may not be protected from weather conditions and may be exposed to extreme heat and extreme cold. Additionally, indoor or outdoor work environments may include being confined or in narrow spaces for periods of time. The incumbent may also be exposed to loud noises or vibrations from equipment, and conditions that may affect the respiratory system, such as fumes, odors, dusts, mists, gases, and poor ventilation. Bending, crawling, and crouching may be required. Incumbents may be required to lift, push, and/or pull objects up to 50 pounds and be required to walk and/or stand for long periods of time.
