Job Description

Full Job Description Position Summary Walls Distilling Co. is seeking an experienced Director of Production to oversee all aspects of spirit production and distillery operations. This position is responsible for managing production schedules, continuous still operations, inventory, quality control, regulatory compliance, facility maintenance, equipment performance, and production staff. Director of Production will be accountable for ensuring the distillery consistently produces high-quality products efficiently, safely, and in compliance with all federal and state regulations. This is a hands-on leadership position requiring both technical distilling expertise and operational management experience. This role is focused exclusively on production and operations. Sales, distribution, marketing, and business development functions are managed separately. Candidates without prior experience operating commercial continuous distillation systems must present a good case for applying this position. Preferred Formal distilling related education or industry certifications. Experience operating a production distillery with multiple product lines and SKUs. Experience with automated bottling and packaging systems. Forklift certification. Experience managing barrel programs and maturation inventory. Core Responsibilities Production Management Manage all daily distillery production activities. Develop and execute weekly, monthly, and annual production schedules. Ensure production targets are achieved efficiently and consistently. Monitor production yields, efficiency metrics, and raw material utilization. Identify and implement operational improvements that increase efficiency and reduce waste. Maintain accurate production records and batch documentation. Continuous Still Operations Operate and oversee all continuous still production activities. Monitor and adjust feed rates, steam input, reflux ratios, proof targets, and product draw points. Optimize continuous still performance to maximize production efficiency while maintaining quality standards. Troubleshoot column performance issues and implement corrective actions as needed. Maintain consistent distillate quality and proof specifications across production runs. Fermentation & Distillation Oversee fermentation scheduling and performance. Manage mash preparation, fermentation monitoring, distillation, proofing, filtration, blending, and finishing processes. Ensure proper handling and storage of raw materials and finished products. Maintain process consistency across all product lines. Quality Control Maintain product consistency across all production runs. Conduct routine quality assurance testing and sensory evaluations. Oversee batch records and quality control documentation. Establish and maintain quality standards for all finished products. Investigate and resolve any quality concerns or production deviations.
Inventory Management Manage inventory of:
Bulk spirits Finished goods Raw materials Packaging materials Barrels and aging inventory Perform regular inventory counts and reconciliations. Forecast production supply needs. Coordinate purchasing requests with ownership. Minimize inventory loss, waste, and shrinkage. Compliance & Recordkeeping Maintain all TTB production records and required documentation. Ensure compliance with federal, state, and local regulations. Support excise tax reporting through accurate production and inventory records. Maintain inspection and audit readiness at all times. Ensure all SOPs and regulatory requirements are followed. Equipment & Facility Maintenance Develop and manage preventative maintenance schedules. Troubleshoot equipment issues and coordinate repairs. Manage vendor and contractor relationships related to production equipment. Ensure safe operation of all production systems. Maintain cleanliness, organization, and professional standards throughout the facility. Team Leadership Recruit, train, supervise, and develop production staff. Establish clear expectations and accountability standards. Create and maintain SOPs for all production processes. Foster a culture of professionalism, safety, efficiency, and continuous improvement. Conduct employee performance evaluations and coaching.
Pay:
$70,000.00 – $100,000.00 per year
