Job Description
Job Summary Responsible for the efficient operation of food services, the kitchen and dinning facility for residents and guests. Orders food, maintains inventory, and updates menus for regular and specialized diets. Performs duties within the guidelines of the Idaho Diet Manual, the Idaho Health and Welfare Guidelines for Assisted Living Facilities and the Restorium consulting dietician. Serves as Head Cook. Trains subordinates and is responsible for kitchen procedures and safety. Responsible for Food Budget. Responsibilities Supervises operation of the kitchen and dining facility. Maintains inventory of food, kitchen equipment, utensils, and other items necessary for efficient kitchen operations. Prepares menus for regular and specialized diets, as outlined in the Idaho Diet Manual by the Restorium Dietician. Maintains sanitation and safety standards as established by the Panhandle Health District, OSHA, and other responsible agencies. Serves as Head Cook 4 days a week preparing meals. Responsible for the safe and proper storage of food and supplies. Responsible for the protection and welfare of all residents. Follows all established infection control procedures. Maintains total management of kitchen, cleanliness and sanitation. Educates and trains kitchen staff in performing duties and routinely follows up. Updates diet sheet and diet cards to reflect accuracy. Follows menus and has food items ordered and available for each meal. Performs all other duties as assigned. Experience Must have or willing to attend training and obtain the Food Safety Manager Certificate. High school diploma or equivalent and minimum of 2 years experience in food service field, preferably in a supervisory capacity. Must be 18 years of age or older. High level of food service procedures, food preparation and food service. Excellent verbal and written communication skills required, as well as the ability to read, understand and follow recipes, special dietary information and various safety and sanitation rules and regulations.
