Position Summary Headwaters Nutrition Counseling is seeking a compassionate, motivated, and evidence-based Registered Dietitian Nutritionist (RDN) to provide outpatient clinical nutrition services while supporting the Child and Adult Care Food Program (CACFP). This position offers a unique combination of direct patient care and community nutrition programming. The successful candidate will provide individualized outpatient medical nutrition therapy (MNT), assist with CACFP compliance and nutrition education, and have the opportunity to build and manage their own patient caseload. This position offers a flexible schedule with opportunities for professional growth and specialization. Essential Responsibilities Outpatient Clinical Nutrition Provide individualized outpatient medical nutrition therapy using evidence-based practice. Complete comprehensive nutrition assessments, nutrition diagnoses, interventions, and monitoring/evaluation (ADIME documentation). Develop individualized nutrition care plans and provide follow-up counseling. Counsel pediatric and adult clients on disease prevention and management through nutrition. Maintain accurate and timely documentation within the electronic medical record. Collaborate with physicians, therapists, behavioral health providers, schools, and other healthcare professionals. Build and maintain an outpatient patient panel through excellent patient care and community outreach. Participate in community education events, presentations, and wellness initiatives as appropriate. CACFP Nutrition Specialist Duties Provide nutrition consultation and technical assistance to CACFP-participating child care centers, family child care homes, and sponsoring organizations. Review menus to ensure compliance with USDA Child and Adult Care Food Program meal pattern requirements. Develop cycle menus, standardized recipes, and nutrition resources that meet CACFP regulations. Conduct nutrition education and annual training for providers, center staff, and families on USDA nutrition guidelines and healthy eating practices. Assist with special dietary accommodations, food allergies, and modified meal requests in accordance with USDA and medical documentation requirements. Support menu planning for infants, toddlers, preschool-age children, and adults participating in CACFP. Provide guidance on food safety, meal quality improvement, and best practices for child nutrition. Assist with monitoring visits, corrective action plans, and documentation as needed. Maintain current knowledge of USDA, CACFP, and state licensing regulations and communicate updates to participating programs. Develop educational materials, handouts, newsletters, and resources related to child nutrition and CACFP. Patient Populations May Include The Registered Dietitian will have the opportunity to develop a patient population based on their clinical interests, experience, and areas of specialization. While referrals may include the populations listed below, the RDN is encouraged to customize and grow their practice within the clinic. Qualifications Required Registered Dietitian Nutritionist (RDN) credential through the Commission on Dietetic Registration (CDR). Current Minnesota Licensed Dietitian (LD) or eligibility to obtain licensure before employment. Bachelor's or Master's degree in Nutrition, Dietetics, or a related field from an ACEND-accredited program. Excellent communication, counseling, and motivational interviewing skills. Strong organizational skills and ability to work independently. Ability to manage documentation and maintain accurate medical records. Professional liability insurance (or ability to obtain). Preferred Experience in outpatient nutrition counseling. Experience with CACFP, WIC, Head Start, or other USDA Child Nutrition Programs. Experience providing pediatric nutrition counseling. Familiarity with medical nutrition therapy billing and insurance documentation. Experience developing nutrition education materials and presenting educational programs. Bilingual skills are a plus. Schedule Part-time (flexible based on candidate availability and program needs). Flexible clinic schedule with opportunities for remote administrative work when appropriate.
